    Savory Oatmeal Topped With A Runny Egg - Great breakfast or lunch option for those who don't want the sweet stuff for breakfast.

     

     

    Savory Oats

     

    Tuesday morning I was sitting at my daughter's gymnastics class, talking to a mom friend of mine and my stomach would not stop growling.  The room is like totally quiet except for us two whispering to each other and my stomach was so loud it was hard to ignore.  I had to bring attention to it.  I apologized.

    My friend went on to tell me that she actually ate breakfast that morning which was the reason she wasn't in the same boat.  We got to talking about breakfast and she admitted she rarely eats breakfast.  I told her the only days I eat breakfast are the rare days that my daughter is in preschool and I go home during those hours.  Generally, I do my shopping and errands while she's in school.  She told me she does the same.

    So, I started thinking about breakfast and what I would want to eat if I made the time.  The only thing that kept coming to mind was bagels!  Ack, bagels are my weakness.  I know I can't eat bagels on the regular so I started asking around to see what others are eating.

     

    Savory Oats

     

    Most of the answers involved cereal (not the healthy kind either), bagels, toast and smoothies.  I love smoothies, don't get me wrong but as a snack.  I make them all the time but not in place of a meal.  I just can't.  My kids do it but they don't love to eat.  I prefer a smoothie around 3PM when I'm dragging and need a little pick-me-up.

    I have one exception to that smoothie/meal replacement rule.  I should admit, I sometimes eat a smoothie bowl for lunch. 

    I started thinking about overnight oats.  I like oatmeal but I really just don't enjoy sugary things first thing in the morning.  The only overnight oats recipes I found were fruity or sugary.

    I started looking around and searching for "savory oatmeal".  I didn't really find much.  I was surprised.  So, I decided to try my own.  I'll be honest, as my oats were cooking, I was kind of like "this is never going to taste right".  I have it in my brain that oats are only sweet.  I was wrong!

    Holy heck, this savory oats breakfast bowl is just what I needed.  I may or may not have made a second one a few hours later for lunch.  Okay, I did.  Don't judge.

    The best part is that it's super easy.  All I did was prepare some quick cooking oats using the measurements on the package but I subbed in chicken stock for the water/milk.  I seasoned liberally with salt and pepper.  While the oats were simmering, I quickly prepared an egg.  I quickly fried up an egg using non-stick spray.  It just takes a few minutes. I cooked it just until the white was set but the yolk was still runny.

     

    Savory Oatmeal Topped With A Runny Egg Recipe Variations:

    • Stir cheese into the oats
    • Instead of frying and egg, try poaching or soft boiled
    • Drizzle Sriracha or Tabasco over the top before serving
    • Add cooked bacon or sausage

    Savory Oats Topped With A Runny Egg

    Ingredients
      

    • 1 cup chicken stock
    • ½ cup quick cooking oats
    • salt
    • black pepper fresh cracked
    • 1 egg
    • non stick spray
    • 1 T chopped scallion

    Instructions
     

    • Place chicken stock in a small saucepan.  Add a pinch of salt and pepper.  Bring up to a boil.
    • Stir oats into boiling stock.  Reduce heat to medium/low and simmer for about 5 minutes.  Set aside.
    • While oats are cooking, spray a non-stick fry pan/skillet with non-stick spray.  Place over medium heat.  When pan is hot, crack egg into pan.  Season egg with salt & pepper.  Cook until white is just set.  Flip over and cook 1 minute more.  Or cook to desired yolk consistency.
    • Place oats in a bowl.  Top with egg.  Garnish with scallion if desired.

      I am so excited to try this!! I love cheesy grits, and I feel like it's a similar mind set. I've added egg beaters to my oatmeal before trying to add protein, but I like this idea better. My Mom has made Savory French Toast before for the kids. We tell them it is "pizza" French Toast, otherwise they wouldn't try it.
