These cubed Air Fryer Sweet Potatoes make a great accompaniment to just about any meal from breakfast thru dinner!
As you know, I’ve been trying to health up my breakfast routine. This week I decided to batch cook some quinoa and make breakfast bowls with quinoa as the base.

While I was batch cooking my quinoa, I was trying to think of some good options that would be filling for my quinoa breakfast bowls. Sweet potatoes immediately came to mind.
Here’s a sneak peek photo of a recipe to come where I used Air Fryer Sweet Potatoes as an ingredient!
Steps To make these Air Fryer Sweet Potatoes:
ONE: Dice the sweet potatoes into cubes. The easiest way to do this is to slice the sweet potato into long slices and then cut those slices into “fries” and then chop each “fry” shape into cubes. I like to go on the smaller side but just know if you make them bigger, you may need to add a few more minutes to your cook time.
TWO: Toss sweet potatoes with 1 tsp olive oil and spices.
THREE: Place in air fryer basket and cook at 400 F for about 10 minutes.
FOUR: Oh, wait, there isn’t a step four, that is it! Enjoy!

These Air Fryer Sweet Potatoes roast up in about 10 minutes with a tiny bit of oil! Perfect alone or as part of a larger recipe like veggie bowls!
- 1 sweet potato peeled and cubed
- 1 tsp olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper fresh cracked
- 1/2 tsp smoked paprika

Toss cubed sweet potatoes with oil and spices well to coat.

Place cubes in air fryer basket. Set to 400 F for 10 minutes.

If your cubes of sweet potato are cut on the larger side, you may need to increase cook time.

Yes, of course. I was using as little oil as possible to save on calories but feel free to add a bit more
Do you know if this would work with butternut squash?
I haven’t tried it (YET) but I would imagine it would be about the same cooking time.
