Let me just start by telling you that today I baked these Apple Monkey Bread Cupcakes with Maple Cinnamon Glaze (longest name of a recipe ever, sorry 'bout that) today and once my son realized what I made, he looks at me and says "I know you don't love to bake, especially for the blog, but Mama, when you bake something like this, it's like the best day of my life, every time".
How can you not love a kid that talks like that?
He is so genuine.
Don't get me wrong, he's a huge pain in my butt, but when he says things like this, he just melts my heart.
So I let him eat two before dinner. Don't break my heart and tell me he's playing me. Just don't.
Anyway, it's almost September, which means, here in MA, it's almost apple season.
Apple season is kind of a big deal in MA. It's tradition to spend the day leaf peeping and visiting apple orchards.
Here's the funny thing, where I live, there is an farm with a pick-your-own apple orchard, about 8 minutes away. I NEVER go there.
To me, apple picking isn't really about the apple picking.
It's about the entire family piling into the car, driving no less than 45 minutes, but sometimes up to 1 hour and 45 minutes. It's about the hay rides, apple cider, cider donuts and the beautiful leaves which are rapidly changing color with the season. It's about family time. I want to spend the entire day and have it be a memory making entire day. I don't want to cram it in between grocery shopping and laundry. I'm not sure why every year he is surprised when I want to make the long memorable drive instead of the quick easy, no memory making drive down the street. I think I drive him crazy.
Anyway, in my round about way, I'm telling you that this time of year, I'm always looking for recipes to use up the apples. Funny thing, in between all our memory making and driving in cars, we do actually pick apples and then we come home and have WAY too many apples than any one family needs.
No they're not really cupcakes but I made them in cupcake liners, so I'm calling them cupcakes. I was stumped. Am I to call them cups? Bites? I wasn't sure, so I took the cupcake route.

As I'm typing this, I just realized, these Apple Monkey Bread Cupcakes will be the perfect addition to my Christmas or Easter Brunch!

These Apple Monkey Bread Cupcakes w Cinnamon Glaze are perfect for brunch, snack or even dessert. Great way to use up those apples from apple picking.
- 1 16.3 oz tube flaky layer biscuits
- 2 T butter
- 2 C chopped apple granny smith preferred, peeled
- 2 T sugar granulated
- 1 tsp cinnamon
- ½ tsp nutmeg
- 3 T butter
- ¼ C maple syrup
- ½ C confectioner's sugar
- ¼ tsp cinnamon
Preheat oven to 350.
Line a muffin tin with either paper liners or use silicone liners.
Cut each biscuit into 9 pieces. Place biscuit pieces, melted butter, apples, sugar, cinnamon and nutmeg in a bowl. Toss well. Spoon mixture into muffin liners.
Bake 20-25 minutes.
Prepare glaze while baking.
After removing from oven allow to cool 5 minutes before removing from pan.
Drizzle with glaze and serve.
