    Apple Monkey Bread Cupcakes with Maple Cinnamon Glaze

    My Apple Monkey Bread Cupcakes are topped with a simple Maple Cinnamon Glaze. They are individual servings or cups of apple monkey bread.

    A small change-up from the traditional cinnamon/sugar, bundt baked monkey bread.

    Grab your can of biscuits and get baking my new favorite fall treat.

    This pull-apart dessert / snack is great for holidays or really any day of the week. I prefer to prepare it during the fall season while I have tons of apples from our annual apple-picking trip.

    If you haven’t gone apple picking in New England, you’re missing out.

    What is monkey bread

    Monkey bread is a sweet-treat version of a pull-apart bread or bubble bread. It is simply canned biscuit dough that is usually seasoned with sugar and cinnamon and some type of glaze.

    Why is it called monkey bread

    A little research on the internet shows the reason might be because of how it is eaten, by picking it off in pieces with your hands, as monkeys eat.

    Is it breakfast or dessert

    You guys know I don’ t always play by the food rules. You decide but I’ll say this, if I can eat eggs for dinner, I can certainly eat monkey bread for breakfast. Pair it with a cup of coffee and you’re good to go any time of day.

    How to store leftover monkey bread

    Like most baked goods, monkey bread is best eaten the day of baking. However, if you do find yourself with leftovers, place is a re-sealable bag and store at room temperature for up to 3-4 days.

    Do I need silicone liners

    I use silicone because I think the paper cupcake liners would stick to the monkey bread with all the ooey-gooey goodness.

    If you can't get your hands on silicone liners just go the classic route and bake up in a bundt pan or baking dish.

    How to make apple monkey bread cups

    Cut each biscuit into 9 pieces.

    Place biscuit pieces, melted butter, apples, sugar, cinnamon and nutmeg in a bowl. Toss well. Spoon mixture into muffin liners. Bake.

    Once baked, allow to cook about 5 minutes in pan before removing.

    Combine glaze ingredients and drizzle the tops of each monkey bread cupcake with the glaze. Don't worry about being neat. Some of the fun is in licking the icing!

    Ingredients
      

    • 1 tube tube flaky-layer biscuits 16.3 ounces
    • 2 Tablespoon butter
    • 2 Cup chopped apple granny smith preferred, peeled
    • 2 Tablespoon sugar granulated
    • 1 teaspoon cinnamon
    • ½ teaspoon nutmeg

    Glaze

    • 3 Tablespoon butter
    • ¼ Cup maple syrup
    • ½ Cup confectioner's sugar
    • ¼ teaspoon cinnamon

    Instructions
     

    • Preheat oven to 350.
    • Line a muffin tin with either paper liners or use silicone liners.
    • Cut each biscuit into 9 pieces. Place biscuit pieces, melted butter, apples, sugar, cinnamon and nutmeg in a bowl. Toss well. Spoon mixture into muffin liners.
    • Bake 20-25 minutes.
    • Prepare glaze while baking.
    • After removing from oven allow to cool 5 minutes before removing from pan.
    • Drizzle with glaze and serve.

    Okay, the next few paragraphs are just a story of a cute little thing that happened when I baked up this apple monkey bread. Skipit if you aren’t interested. I just can’t seem to bring myself to delete this little memory from this post as I am making updates.

    Once my son saw what I made, he looks at me and says "I know you don't love to bake, especially for the blog, but Mama, when you bake something like this, it's like the best day of my life, every time".

    How can you not love a kid that talks like that?

    He is so genuine.

    When he says things like this, he just melts my heart.

    So I let him eat two before dinner.  Don't break my heart and tell me he's playing me.  Just don't.

      Aw, your son is adorable! Nothing beats getting a compliment like that!

      My husband's favorite apple type is the Granny Smith too, btw, I hear they are the best for making desserts; but I get them for him for just plain snacking. I prefer the Golden and red personally but I have made apple crisp with Granny Smiths and it turned out great!
