These Baileys Irish Cream Brownies start with a boxed mix but no one will ever know-they're that good!
Adding Irish cream to a boxed brownie mix adds just the right hint of flavor that will make your guests say "mmmm, what is that?".
But why stop there, I like to take my boxed brownie mix over the top and make a ganache infused with Irish cream .
Sometimes I just have to be indulgent, ya know? What's better than a boozy brownie with a heavenly, yet oddly easy, chocolate Baileys ganache? Not much, I'll tell you that!
The boozy Baileys taste is subtle here but good. I'm not a big fan of brownies that have an overpowering boozy taste.
Are Boozy Brownies Only For Adults?
My short answer is yes, save the boozy brownies for the 21+ crowd. I'm sure the booze in the cake gets burned out but I would think the alcohol in the ganache would still be too much for kids. My advice, when in doubt, don't serve anything with alcohol to kids.

Ingredients
- Boxed brownie mix - your favorite variety - plus the ingredients called for on box
- Irish cream - I prefer Baileys
- Semi-sweet morsels
- Heavy Cream
1.Stir together all brownie mix ingredients but replace the liquid called for with the Irish cream.
Spread into prepared pan and bake.
3. After 3-5 minutes stir until it comes together with a smooth consistency.
2. While brownies are cooling. Heat heavy cream and Irish cream over medium heat. Once it comes to a bubble, pour it over the chocolate chips and let sit. Do not stir right away.
4. Spread ganache over cooled brownies. Allow at least an hour for everything to set before cutting.
Do yourself a favor, don't wait until St. Patrick's Day to make these decadent ganache brownies. These boozy brownies make a great dessert for any holiday or party!

Baileys Irish Cream Brownies
Ingredients
- 1 box brownie mix + Ingredients called for on box
- ¼ Cup Baileys Irish Cream
Ganache
- 1 Cup semi-sweet chocolate chips
- ⅓ Cup heavy cream
- ⅓ Cup Baileys Irish Cream
Instructions
- Prepare brownies according to package instructions except replace the water called for with Baileys. Bake as instructed and allow to cool completely.
- Place chocolate chips in a bowl.
- Place heavy cream and Baileys in a small saucepan over medium heat. Bring just to a boil and then pour over chocolate chips. Do not stir right away. Wait 3-5 minutes and then stir the chip mixture until smooth. Pour/spread mixture over cooled brownies. Allow ganache to cool at room temperature before slicing.

I made these today and while very delicious, I couldn't detect the Bailey's. Would it mess up the texture to increase the Bailey's in the brownies?
I used 1/4 cup in place of water. Thank you for your suggestions.

I haven't tried it with more liquid. Did you make the ganache? I agree the taste is subtle as I didn't want it to be overpowering but I thought the majority of the Baileys flavor really comes through in the ganache. I think you could add more Baileys to the ganache without a problem.

Yes. I did make the ganache but still couldn't taste the Bailey's. I'll let some friends try them. Maybe it's just me! Probably a good idea to leave the brownies as they are and just increase the Bailey's in the ganache. I'll try again. Thank you!

Hi Agatha, I think it's about 18 oz. It's the box where you can make either a 9x13, 9x9, 8x8 or 24 cupcakes. I chose to make these in an 8x8 so I'd have nice thick, fudgy brownies. Enjoy!

i used Betty Crocker fudge brownie mix and followed all directions. Couldn't taste Bailey's in either brownie or ganache. They looked good but did not taste good.

I'm so confused how this could happen. While the Baileys is a subtle taste ( I didn't want to overpower with a boozy taste), I've had great feedback thru everyone who has made them thru Pinterest. I'm sorry that was not your experience.
Just out of curiosity, what kind of chocolate did you use for the ganache? The ganache, for me, is where most of the Baileys flavor is and I'm wondering if the type of chocolate would make a difference.

Yes, in the ingredient list, I mention boxed mix + ingredients called for on box. You will prepare the mix as you would for normal brownies but then sub the Bailey's in place of water.

I made these today and they were delicious!! I think you can absolutely taste the Baileys in the ganache. And in case anyone else is wondering (like I was), I added vegetable oil and eggs to the brownie mix like the box says and then substituted 1/4 c Baileys for the 3 TBS water. I was kind of confused on that point since this recipe doesn't call for veg oil or eggs. They turned out great! I'm so glad I tried it out.

I've got one thing to say... Dayum! I made two batches. The first one, I wasn't clear of when to start making the ganuch. So it was a bit cooler by the time I was ready to put it on the brownies. So I microwaved it for 20 seconds. Then I screwed up because the brownies weren't really as cool as I thought they were. I'm an impatient girl. But they still turned out so good.
The 2nd batch, I slowed my roll. But I did add Bailey's to the Brownie mix instead of water... It seemed a lot more stiff when mixing it. So hopefully they aren't dry. I haven't tried one yet. Still recovering from the first one.
