I have not tried to hide my love of appetizers and dips. As I've mentioned before, I would gladly forgo dinner in order to scarf down more of the starters. As a matter of fact, tonight I was serving tacos for dinner and because I did perhaps a little too much taste tasting of this Baked Onion Dip, I skipped dinner altogether.

What's a girl to do when faced with a bubbling plate of cheesy Baked Onion Dip goodness.
When it comes to onion dips I've had a few changing thoughts:
- Wow, all I have to do is mix sour cream and an envelope of powdery seasoning - GREAT!
- What is all that weird powdery stuff? Why don't I recognize most of those ingredients?
- I'll make my own onion dip
- Say what? Most homemade onion dips have mayo? No thank you. I'll create one without.
- I can make onion dip so much better I bet if I add cheese! And bake it! It's awesome! I'm never looking back!
This time I'm not actually sure there is any topping this Baked Onion Dip. I mean, I know I thought that with my last homemade onion dip, but what else could possibly be done? I think this Baked Onion Dip is my end all be all recipe for Onion Dip. What do you think?
Here are the easy steps to make Baked Onion Dip:
First, cook onions...
until they look all perfect like this.
Next, stir in all other ingredients
Then transfer mixture to baking dish, top with cheese and bake.
Serve warm
with sliced baguette
pita chips or crackers - Enjoy!
Quick Baked Onion Dip Note:
- Cheese is always better when you shred it yourself. I use a simple box grater and it takes no more than 2 minutes.
- It is tough to measure the amount of onions, don't worry, using more or less onion will be fine.
- As with any recipe, salt preference is personal. Always taste as you go to make sure you like the salt level. You can always add more but you can't remove.
Baked Onion Dip
Ingredients
- 2 T butter
- 3 small-medium sweet onions thinly sliced
- 2 cloves garlic minced
- ¼ teaspoon thyme dried
- ½ teaspoon salt kosher
- ¼ teaspoon black pepper freshly cracked/ground
- ¼ C beef broth
- 4 oz cream cheese softened
- ½ C sour cream
- ¼ C Greek yogurt plain
- 1 ½ C gruyere cheese shredded/grated
- 1 T chopped parsley optional
Instructions
- Preheat oven to 350 F. Spray a 9 inch baking dish or pie dish with non-stick spray.
- Melt butter in a large skillet over medium heat. Add onions. Cook, stirring only occasionally to allow the onions to caramelize. This should take about 20-25 minutes.
- Once onions are golden and caramelized, add garlic, thyme, Worcestershire sauce, salt and pepper. Stir well and cook 5 more minutes.
- Stir in beef broth. Increase heat to medium high and bring to a simmer for 2 minutes. Remove from heat.
- Stir in softened cream cheese, sour cream, yogurt and 1 C shredded gruyere.
- Transfer mixture to a prepared baking dish. Top with remaining cheese.
- Bake in preheated oven 12-15 minutes.
- Serve warm with sliced bread, pita chips and/or crackers.

Hahahahaha! Love your evolution of onion dip! This looks great. I might chop the onion. When I leave it long or in rings, it always ends up on my chin.
