Twice Baked Sweet Potatoes start with sweet potatoes that are baked or air fried. The sweet potato is then scooped out and combined with bacon, sour cream and cheese, replaced and then they are cooked again!
Despite the name "twice baked" sweet potatoes, they can actually be prepared in the air fryer if you don't want to bake in the oven.

I like to go savory all the way with my sweet potatoes, like when I do my air fryer sweet potato cubes. If you like the marshmallow style, you'll want to try these Smoked Sweet Potatoes.
How to Make Twice Baked Sweet Potatoes
The first step is baking (or air frying) the potato. This is done like any baked potato.
The cook times I'm listing for the initial bake are simply for reference. The timing will greatly depend on the size of your sweet potato.
Oven Baked sweet potato: 400 degrees F for 45 to 60 minutes
Air Fryer Sweet Potato: 380 degrees F for 35 to 45 minutes.
Once the potato is baked/roasted/air fried set it aside and let it cool enough that you can handle it comfortably.
While the potato is cooling is when I use that time to prepare my bacon. If you didn't know you can make bacon in the air fryer too.
Slice the top off each sweet potato and carefully scoop out the pulp. Place the pulp in a bowl and stir it together with sour cream, butter, salt, pepper, cheese and some of the bacon.
I like to reserve a little bit of the bacon to top it with at the end.
Spoon the mixture back into the hollowed out potato skins. You can sprinkle more cheese on top if you want. I want.
Pop those potatoes back in the oven or the air fryer. This is your second bake, hence the twice-baked name.
Oven method: 400 degrees F, 5 to 10 minutes
Air Fryer: 360 degrees F, 4 to 5 minutes.
Final Step: Top with remaining bacon and sprinkle with chopped green onions and chow down!

Twice Baked Sweet Potatoes (Air Fryer and Oven)
Ingredients
- 2 sweet potatoes
- 2 slices bacon, cooked crispy and chopped
- 2 T sour cream
- 1 T butter, melted
- ¼ teaspoon salt
- black pepper, few turns of a pepper-mill
- ¼ C shredded colby jack cheese (can use cheddar, cheddar jack or similar cheese)
- 2 T chopped green onions
Instructions
- Wash the sweet potatoes and dry well. Poke a few holes with fork or knife in potatoes. Spray sweet potatoes with a light coat of oil (salt if desired) and place in air fryer set to 380 F for 40 minutes (or in preheated oven 400 F for 1 hour). If your sweet potato is on the smaller side, reduce time by 5 minutes. Set aside to cool.
- Prepare bacon while sweet potatoes are cooling if it's not already prepared. Chop and set aside.
- Once potatoes are cool enough to handle, slice off the top of the potato. Scoop pulp out of potato into a bowl, being careful not to rip through the skin with spoon.
- Into the pulp, stir butter, sour cream, salt, pepper, crumbled bacon and cheese. Spoon mixture back into the potato skins.
- Place back in air fryer at 380 F for 4 minutes or back in the oven at 400 F for 10 minutes.
- Top with chopped green onions and serve.
