It might seem weird that I am posting a BLT Tortellini, when I, in fact, have never eaten a BLT sandwich. Ever. Go ahead, add it to that list I posted a while back, of all the "normal" foods that I don't eat.Â
Here's the thing about it. I love bacon. Duh, it's bacon, everyone loves it. I don't, however, love tomatoes. Well, I take that back, sort of. I don't love fresh tomato slices (my one exception is in a good caprese salad). I do like tomatoes cooked in things like pastas, omelets, sautéed or with roasted veggies.
Ordering sandwiches or burgers in restaurants is always a nightmare for me. I always ask for no lettuce, tomato and onion but they always put it on there anyway. Why do they do that? It drives me nuts!
Back to the tortellini. Now that you know about my dislike for tomato, you must be wondering why I would want to serve this BLT Tortellini?Â
Well, it's sort of cheating, it's more of a nod to the BLT. I'm using bacon. Again, duh, it's bacon! Instead of regular tomatoes, I used sun dried tomatoes packed in herbs. And lastly for the lettuce, I used arugula. You could easily swap spinach for the arugula if you aren't a fan. I am a huge fan of arugula. I've been using it a ton lately, like in my Stacked Eggplant & Arugula Salad, Orange Zested Chicken Cutlets and even just the other day I piled it on top of my Meatloaf Burger.
I probably should have led with is information, but this meal is ridiculously easy. Not only that but it can be served hot or at room temperature. It would be a great dish to take to a potluck or family gathering, because it can travel well.Â
A quick note about the tortellini. I always use refrigerated tortellini and I recommend you do the same. It's a bit pricier than frozen or dried but it's totally worth it.

BLT Tortellini
Ingredients
- 20 oz fresh cheese tortellini
- 5 slices bacon cut into 1 inch slices
- ½ C sun dried tomatoes packed in herbs and oil, drained of liquid, sliced into strips
- 2 C arugula
Instructions
- Add slices of bacon into a large non preheated skillet. Turn heat to medium. Cook until nicely browned and crisp, stirring often. Remove bacon with a slotted spoon to a paper towel lined plate, set aside.
- Bring a large pot of water to a boil. Salt the water, generously. Add tortellini and gently boil 7-9 minutes.
- While tortellini is cooking: Discard all except 1 teaspoon of bacon grease from skillet. Return skillet back to medium heat, add sun dried tomatoes.
- When tortellini is done, transfer tortellini to skillet, using a slotted spoon. Stir. If mixture seems dry a little bit of pasta cooking water.
- Stir in arugula. Continue to cook over medium heat until arugula is wilted. Add bacon back to pan, stir and serve.

Speaking as a former server, even if I type in no lettuce or tomato on your sandwich, most of the time the cooks prep the plates ahead of time, because that stuff is borderline a garnish. So I would have to remember to type it in, the cooks would have to remember to keep one plate special, and then I would have to remember in the back to check and make sure they got it on the right plate. If the server or cook is busy, it is a very easy one to miss. It's also very frustrating, because there is nothing like getting no tip because someone didn't want to remove lettuce from their sandwich. Before you say that's the job, European servers wouldn't do it for you, and Europeans wouldn't expect it. It's only in America that people think they should get to modify every little thing on the menu, and get outraged if their three pages of instructions are slightly wrong in a slammed restaurant. I'm sure you are not one of those people though. I'm not a server anymore, but I feel for anyone serving in the United States.

I appreciate your comment. I would NEVER not leave a tip for that, I assume that is the cook's job to get the plate out correctly, not the server. I never complain to the server about it, I merely was saying it bums me out.
