These Breakfast Egg Rolls can be customized to whatever add-ins you like and are made a tad healthier by "frying" in the air fryer rather than deep frying in oil.
When making Breakfast Egg Rolls you can swap up the "fillings" to whatever you like to pair with the eggs. I had some meat free sausage patties leftover from when I created Breakfast Burritos so I went with that. Air Fryer Bacon is also an amazing choice.

I chose to air fry these egg rolls but you can also bake them. If baking, follow all instructions except place on baking sheet and bake for about 15-20 minutes at 425 F.
The steps to make these Air Fryer Breakfast Egg Rolls are easy:
First, cook your eggs and combine with whatever stir ins you choose (sausage, bacon etc).
Next, begin to assemble rolls by placing egg roll wrapper as seen in picture below. Place the cheese as seen.
Add your egg mixture on top of the cheese.
Wet the edges of the entire wrapper by dipping finger in water and rubbing the water on. This will help everything stick closed. Fold up the bottom corner up and over the filling. Work it so it is wrapped tight around the filling.
Fold over the sides next and again try to go tight. It should look almost like an envelope at this point.
Now, fold the other corner over the rest of the roll. Set aside, seam side down and finish assembling the rest of the egg rolls.
Brush a little oil, or if you have a Misto, spray a little oil on the surface of egg rolls and place in air fryer basket.
Cook egg rolls for 8-10 minutes and serve!

Breakfast Egg Rolls Air Fryer
Ingredients
- 2 eggs
- 2 T milk
- salt
- pepper
- ½ C shredded cheddar cheese
- 2 sausage patties or any other additional stir ins
- 6 egg roll wrappers
- 1 T olive oil
- water
Instructions
- Cook sausage or substitute in a small skillet according to package. Remove from pan and chop into bite sized pieces.
- Whisk together eggs, milk, a pinch of both salt and pepper. Add a teaspoon of oil or a small pat of butter to pan, over medium/low heat. Pour in egg mixture and cook a few minutes, stirring occasionally to create scrambled eggs. Stir in sausage. Set aside.
- Place egg roll wrapper on a work surface with points creating a diamond shape. Place about 1 T of cheese on bottom third of wrapper. Top with egg mixture.
- Wet a finger or pastry brush with water and brush all edges of egg roll wrapper, this will help it seal.
- Fold bottom point of egg roll wrapper up and over the filling, trying to get it as tight as you can. Next, fold in the sides, creating an envelope looking shape. Last, wrap the top point around the entire wrapper. Place seam side down and continue to assemble the remaining rolls.
- Preheat air fryer to 400 F for 5 minutes.
- Brush rolls with oil or spray them if you have a misto. Place in preheated basket. Set to 400 F for 8 minutes.
- After 5 minutes, flip egg rolls over. Return egg rolls to air fryer for another 3 minutes.
- Serve and enjoy!

They most likely will freeze better if you make them and store in ziploc bag and not air fry them.

My husband liked it. I was disappointed in the outside. I was hoping the crust would be flakier. I am wondering if I put to much oil on it. I used olive oil for frying and baking. The crust was a bit chewy.

It sounds like perhaps you used too much oil on the outsides of wrappers. A little goes a long way in the air fryer.

Haven't tried yet - they sure look great for my grab and go kids though! Note addressing Sherry's concern about chewiness. I read advice somewhere, and follow it with great results, about being sure to preheat your air fryer for 5-10 minutes. Because they come up to temp so quickly people often don't preheat, and what happens is the food seems to steam a bit instead of 100% crisping.

I don't have this information readily available. However, there are several websites and apps where you can plugin the ingredients and it will calculate calorie info for you.

Very tasty and pretty easy to make. Our add-in’s were cooked chicken jalapeño sausage (Trader Joe’s browned in advance and frozen), onion and bell pepper. Added freshly shredded pepper jack cheese, cumin and chili powder to the sautéed add-in’s. Stirred all the cheese I to the egg mixture so it melted before wrapping. Our air fryer took a bit longer to Brie. Then, maybe 15 minutes, but very tasty and something different for bury. Served with a fruit salad and Greek yogurt.

Sounds great and like most appliances, I'd say each brand of air fryer will cook just slightly different than another.
