Chicken Fajita Salad - Everything you love about chicken fajitas transformed into a hearty entree salad.
You guys know by now, when I do a salad, it isn't going to be a boring old salad. No sir. Not for me.
Since my husband has been working crazy hours lately, he hasn't really been able to eat dinner at home. I think we all know I have a hard time scaling recipes down for just myself, so I've been trying to make dinners for myself that I can re-purpose into lunch the next day or vice-versa, lunch to dinner.
For instance, last week I shared my Buffalo Chicken Salad. I had that for lunch and then re-heated the leftover chicken and tossed it in with some pasta. See that, two meals.
With this Chicken Fajita Salad, I ate it as a salad for dinner and then for lunch the next day, I put the salad into a tortilla and had an awesome wrap.
Let me share a tip about saving leftover salad. I find the lettuce doesn't wilt (as much) if you store the chicken in a separate container.

Chicken Fajita Salad
Ingredients
- 1 T vegetable oil
- 1 T butter
- 1 lb chicken tenders
- 2 T fajita seasoning
- 2 C chopped peppers (any combination of red green, yellow and/or red)
- 1 C sliced red onion
- 12 oz bagged salad
- 1 avocado sliced or diced
- 1 lime cut into wedges
- 2 T freshly chopped cilantro
- Optional: crushed tortilla chips
Instructions
- Cut chicken into bite sized pieces and place in a bowl. Toss chicken with fajita seasoning.
- In a large non-stick skillet over medium/high heat melt the butter with the oil. Add the seasoned chicken to the pan, being careful not to overcrowd (if needed cook chicken in batches). After 4 minutes, stir chicken and continue to cook another 4-5 minutes until browned and cooked thru. Remove chicken from pan and set aside on a plate.
- Return pan back to heat. If pan is dry, add 1 teaspoon more of oil. Add onion and peppers to pan and cook just until tender crisp, about 3-4 minutes.
- Place lettuce in a large bowl or platter. Top with vegetables, avocado, chicken and cilantro. Toss to combine and serve with lime wedges.
- Squeeze lime wedge over salad just before serving. Add tortilla chips for garnish if desired.
