    Creamy Spinach Quesadilla

    If you are looking for an easy weeknight meal that is both delicious and a little different than the usual, then this Creamy Spinach Quesadilla recipe is for you.

    Not only does this beautiful garlicky spinach quesadilla make a great dinner but the kids will appreciate it as an after-school snack and your guests will be asking for more if you serve it as a Superbowl appetizer at your watch party.

    It is no mistake that this girl loves a quesadilla. A quesadilla is really a blank canvas. You can get creative and use whatever ingredients and flavors you like.

    🍴What is a quesadilla

    A quesadilla is simply a tortilla that is filled with cheese. There are so many variations but the traditional Mexican quesadilla to my knowledge is tortilla and cheese.

    I'm pretty sure traditionally a corn tortilla is used but I use flour tortillas for my quesadillas. Personal preference.

    🍳How to make a quesadilla with spinach

    The following instructions are for my visual learners. If you don't need the visual, feel free to jump on down to the recipe card where you will find the ingredient list and detailed cooking instructions.

    1. Start by cooking the spinach and garlic together, just until spinach is wilted.

    2. Heat a tortilla in a skillet with a little bit of oil. Once heated, using tongs, flip tortilla over in pan.

    3. Spread the cream cheese over the entire surface of the tortilla and then on half of the tortilla layer the remaining ingredients.

    4. Using tons, fold the quesadilla up over the filling. Cook a few minutes and then carefully flip quesadilla over and cook other side, just until cheese is melty and tortilla toasty.

    5. Once the quesadilla is ready, transfer it to a cutting board and cut either in half or in thirds and serve.

    🍽️What to serve with quesadillas

    Typically, I'd serve quesadillas with an Easy Homemade Guacamole, salsa and sour cream.

    However, because these are spinach quesadillas, I think a warm marinara sauce is the perfect dipper. Personally, I don't even think these spinach quesadillas require a dipping sauce but if you do, marinara is the way to go.

    If you are serving quesadillas as a dinner entree, serve with rice or a salad. You could even serve with some Air Fryer Crispy Potatoes or Air Fryer Fries!

    🔪Variations

    • Try a low-carb high fiber tortilla if you are watching your carb intake.
    • Swap out the cream cheese for something lighter like Laughing Cow spreadable cheese.

    Creamy Spinach Quesadilla

    This Creamy Spinach Quesadilla comes together in about 15 minutes or so from start to finish.  Makes a great lunch, dinner or even appetizer.

    Ingredients
      

    • 1 Tablespoon olive oil
    • 2 cloves garlic minced
    • 5 Ounces baby spinach fresh
    • 1 Large tortilla burrito size
    • 1 Ounce cream cheese softened
    • 1 Cup shredded mozzarella cheese or cheese blend I use a combo of mozzarella and provolone

    Instructions
     

    • Heat oil in a large skillet over medium heat.  Add garlic and cook 30 seconds.  Stir in spinach.  Cook until spinach is wilted, stirring often.  Remove from skillet and set aside.  Do not wipe any excess oil out of pan.
    • Return skillet to medium heat.  If pan is totally dry and no oil remaining, heat 1 teaspoon oil. Place tortilla in heated skillet.  Cook just a few minutes until browned.  Flip it over and spread cream cheese over entire surface of top side of tortilla.  Sprinkle half of the cheese on HALF of the tortilla and then the spinach and then the remaining cheese.  Fold the tortilla over and cook until browned.
    • After one side is browned, carefully flip and cook until other side is browned and cheese melted.
    • Remove from skillet, slice into thirds and serve.
