Creamy Spinach Quesadilla - An easy weeknight quesadilla loaded with garlicky spinach, mozzarella and cream cheese! I dare you to say you don't like spinach after trying this!

It is 2:14 PM as I type this.
I got the idea for a creamy spinach quesadilla at approximately 12:45 PM while wandering around the grocery store, trying to remember what I was there for.
Why am I giving you a timeline of my day? Because I want you to understand how quickly these Creamy Spinach Quesadillas come together. Yup, idea, drive home, cook, photos taken AND edited and all done in an hour in a half. I am pretty impressed with myself today, can you tell?
Honestly, I didn't time the actual cooking process because I was also emptying the dishwasher and dealing with a barking dog while I was cooking but if I had to guess, I'd say 10-15 minutes, TOPS!
Steps to make Creamy Spinach Quesadilla
Wilt the spinach in a large skillet with some garlic. Season that with salt and pepper. Remove from skillet and set aside.
In the same skillet, place your tortilla. Brown it a little bit, flip it over and spread cream cheese across the entire surface.
Then, sprinkle half the cheese on HALF the tortilla.
Place the spinach over the cheese and then add the rest of the cheese.
Fold it over and cook until browned, flip it over and brown the other side.
Remove the quesadilla from the skillet and place on cutting board or plate.
Cut it into thirds and serve.

Creamy Spinach Quesadilla
Ingredients
- 1 T olive oil
- 2 cloves garlic minced
- 5 oz baby spinach fresh
- 1 large tortilla burrito size
- 1 oz cream cheese softened
- 1 C shredded mozzarella cheese or cheese blend I use a combo of mozzarella and provolone
Instructions
- Heat oil in a large skillet over medium heat. Add garlic and cook 30 seconds. Stir in spinach. Cook until spinach is wilted, stirring often. Remove from skillet and set aside. Do not wipe any excess oil out of pan.
- Return skillet to medium heat. If pan is totally dry and no oil remaining, heat 1 teaspoon oil. Place tortilla in heated skillet. Cook just a few minutes until browned. Flip it over and spread cream cheese over entire surface of top side of tortilla. Sprinkle half of the cheese on HALF of the tortilla and then the spinach and then the remaining cheese. Fold the tortilla over and cook until browned.
- After one side is browned, carefully flip and cook until other side is browned and cheese melted.
- Remove from skillet, slice into thirds and serve.
