    Creamy Strawberry Jalapeno Crispbread - Not only does this recipe make a fabulous after school / mid day snack, but it doubles as an awesome appetizer for any type of party!

    Creamy Strawberry Jalapeno Crispbread

    With school on the horizon (less than 2 weeks, EEK), I'm already in the mode of coming up with quick dinners and after school snacks.  My son comes home, famished; it's as if he doesn't eat a thing at school.

    He gets off the bus around 3 PM so I don't really like to fill him up with a bunch of junky snacks and chance ruining his appetite for dinner.

    Something I've told you about, that I like to snack on lately, is a combination of ricotta and goat cheese.  Luckily for me, my 7 year old is way into cheese.  He gets that from his Mama!  He might not like the "typical" kid stuff (like pizza), but man does he have an eye (and nose) for cheese.

    I started thinking of ways to dress up my cheese concoction as an after-school snack and that's when I remembered seeing a bunch of recipes lately that featured Smucker's Fruit & Honey Strawberry Jalapeno Fruit Spread.  Yup, I thought, that would go perfectly sitting atop my creamy cheese mixture. 

    From what I had read, this fruit spread is a perfect blend of sweet and heat.  I love that combination and surprisingly, my kids do too.  This new fruit spread is also naturally sweetened with honey, so I like the sound of that!

    The only thing I was missing for this tasty after-school snack was the vessel in which to serve it on.  I mean a ricotta/goat cheese mixture can't stand on it's own.  I was heading to Walmart anyway, to get school supplies so we ventured down the cracker aisle to find just the right fit.  After reading countless labels, I decided on the Wasa Multigrain Crispbread.

    Why that one, you ask?  Well, I'll tell you.  These Crispbreads are all natural, high in fiber, low calorie and contain four wholesome grains.  Plus, they are nice and crunchy, so for me they make the perfect canvas for creating snacks.

    Once I got everything together, I quickly mixed together the cheeses.  I also added a bit of lemon zest, salt and pepper.  After I spread the mixture on the Wasa Crispbread, I topped that with the fruit spread.  Thankfully, my kids are on board for a little sweet/heat mixture.

    I was so happy all these flavors worked together.  I can tell you these Creamy Strawberry Jalapeno Crispbreads will be a regular in the after-school snack rotation.  They're probably also going to be in the mid-day Mom snack rotation while the kids are at school too!

    I think this recipe is pretty darn perfect using the Strawberry Jalapeno variety of fruit spread but Smucker's has a few other Fruit & Honey spreads you could try out for this too, like Blueberry Lemon, Concord Grape, Strawberry & Triple Berry.  Which one will you try?

    Ingredients
      

    • 1 C Ricotta Cheese
    • 4 oz Goat's Cheese
    • Zest of 1 Lemon
    • Pinch of Salt
    • ¼ teaspoon Black Pepper freshly cracked
    • 1 Package Wasa Multigrain Crispbread
    • 9 oz Smucker's Fruit & Honey Strawberry Jalapeno Fruit Spread

    Instructions
     

    • In a bowl stir together ricotta, goat cheese, lemon zest, salt and pepper until smooth.
    • Spread mixture across each crispbread. Top with fruit spread.
    • Garnish with additional zest if desired.
    • Enjoy!

      This looks utterly delicious. I love their fruit spreads. I have a whole whack of them in my fridge at all times. There's so muchyou can do with them. I love this recipe, sweet with some heat. That's right up my alley. Plus it's so darn pretty.
