School started yesterday for my kids. Bittersweet. I could use some alone time, but I am all talk, I will miss those little buggers. With school comes the reminder that fall weather is right around the corner. It’s already begun to cool off at night quite a bit here. I can feel summer slipping away pretty quickly. While that is a bit sad, the major upside is that fall cooking is THE BEST!
Comfort food is at it’s peak in the fall. Casseroles, apples, pumpkins and pies; you can’t go wrong with the flavors of fall. Pretty soon we’ll be apple picking. Oh gosh, I love apples and all the tasty treats that come after apple picking.
Speaking of apples, have you ever thought about a fruity recipe you love and then realized “that would be so much better with a hint of chocolate”? That’s exactly what went through my mind the other day when I set out to bake my short cut apple crisp. It’s a shortcut recipe because I use yellow cake mix for the topping in lieu of measuring out flour, sugar and spices. Sometimes I add oats to it and sometimes I don’t. It all depends on how I’m feeling.
I hit Walmart to grab me some M&M’s® and in the display was something that caught my eye – M&M® Pecan Pie! Lightbulb went off. I think you know where this one is heading. For those of you who aren’t sure still, I am putting the M&M’s® Pecan Pie IN THE APPLE CRISP!!! Seriously. I know. How great is that, a combination of Pecan Pie and Apple Crisp. It’s like two best friends getting married!
Feel free to plop a big ole scoop of vanilla ice cream on top of your crisp. I don’t roll that way but my husband does. In fact, I was all about apple. I just couldn’t get enough, so I washed my crisp down with a Snapple® Apple! Just so happens I picked up a few of the singles while I was checking out at Walmart too. How convenient for me, huh.

Oh, you guys know I love a good deal, right? Well, I am happy to tell you that there is a coupon available to save on your next purchase of M&M’s®.
- 6 granny smith apples peeled and chopped
- 1/2 C Mott's® Apple Juice
- 1 C Pillsbury™ Moist Supreme® Cake Mix yellow
- 1 T cinnamon
- 1/4 C old fashioned oats optional
- 1/4 C brown sugar
- 4 T butter melted
- 1/2 - 3/4 C M&M's® Pecan Pie adjust amount per your preference

Preheat oven to 350.

Place peeled and chopped apples in a 9x9 baking dish. Pour apple juice over apples.

Sprinkle half of the M&M's® Pecan Pie over apples.

In a separate bowl combine cake mix and cinnamon and oats. Sprinkle mixture over apples. Sprinkle brown sugar over that.

Drizzle melted butter over mixture and top with remaining M&M's® Pecan Pie.

Bake at 350 for 35-45 minutes, until top is crisp.

Serve warm, with or without vanilla ice cream.
Oh how I wish we could get these wonderful M&M flavours in the UK!! Pecan Pie, oh my! I will look for them on my next trip stateside in a couple of months. I can’t wait to give this delicious recipe a try!
