Do you ever tell the kids they can have A friend over and then the next thing you know, you've got more than a handful of kids and just as many parents hanging out? Just me? No. It can't be.
Since we spend most of our summer hanging at our own pool, we end up with tons of people here. Sometimes it really is just one or two but most of the time it turns into a big to-do. Each "play date" turns into a full blown pool party, complete with food and dessert.
Something I have learned along the way, is that I can feed everyone and keep it easy at the same time. I make sure my freezer is stocked with burgers and hot dogs and as of late I've realized that having dessert staples like Marie Callender's® Pies and Reddi-wip® is a huge time saver. Plus, these products are easily found at Walmart, so there's that too!
Marie Callender's® Apple Pies are wholesome and made with real ingredients so I don't feel like I'm cheating by not baking from scratch. They make the pie like I would, except I didn't have to!
Tip: If you notice the crust edges browning up too quickly, you can cover the crust in foil.
If I know I'm having a few families over, I bake up the pie early in the morning before it gets too hot out. I then let it cool to room temperature. Once everyone has eaten their lunch and has finished swimming, I quickly put together a tray of individual serve parfaits.
I keep it simple and layer it like this : apple pie, Reddi-wip, apple pie, Reddi-wip, caramel sauce and sometimes I throw a cherry on top for an added bonus. I know adding a layer of vanilla ice cream in there would be great but I'm serving these outside and I'm not sure the ice cream can hold up in the high temperatures we've been having. You better believe that when we host something indoors, there WILL be ice cream involved. Who can resist anything pie related a la mode?
I love how this dessert is classic but yet not. You know, I mean what is more classic American than an apple pie? This is more like Classic American fare with a twist. A fun twist. Plus, I just can't help deconstructing food. It's fun to play with food.
These Easy Apple Pie Parfait Cups are so easy that I take pause calling it a recipe. It's more like an idea. You can play around the amounts and add in other toppings if desired. Some ideas for other layers would be:
Ice Cream
Vanilla Yogurt
Granola
Salt on the caramel
Dried Cranberries
