The classic Thanksgiving side dish gets a fresh new upgrade my Fresh Green Bean Casserole recipe.
In addition to the traditional cream of mushroom soup and crunchy onion topping, I'm using fresh green beans, fresh mushrooms and a little sharp white cheddar cheese! Yum.
Do you consider Green Bean Casserole to be a Thanksgiving only kind of dish?
Not me. I'll take any chance I get to make this creamy vegetable casserole with the iconic crunchy onion topping.
I often pair green bean casserole with crispy pork chops or crispy chicken cutlets for a weeknight meal.
Whenever I serve this dish to someone new, they always ask me what's different about it. They can't quite put their finger on it but they know it's a bit different, in a good way of course.
My secret?
CHEESE!
Yep, it might seem weird but that little something extra I use is sharp white cheddar cheese.
I also use fresh mushrooms and fresh green beans, so that's a plus too.
Don't worry, I still use the classic condensed soup. Some things need not change.
How Many People Does This Recipe Feed?
This version as prepared feeds four to five people as a side dish. If you plan to use this casserole recipe for Thanksgiving then double the recipe.

Green Bean Casserole
Ingredients
- 14 oz green beans fresh
- 1 T butter
- 4 oz mushrooms baby bella, sliced
- 1 teaspoon Worcestershire sauce
- 1 teaspoon salt kosher
- ¼ teaspoon black pepper
- 1 can condensed cream of mushroom soup
- ⅓ C milk
- ½ C shredded sharp white cheddar cheese
- 2.8 oz fried onions
Instructions
- Preheat oven to 350.
- Prepare a 2 Q baking dish (or similar) with either butter or non-stick spray.
- Trim ends of green beans and if desired cut beans in half.
- Bring a pot of water to a boil. Plunge beans in boiling water and cook, just until starting to get tender, about 5 minutes. Drain and set aside.
- Melt butter in a large skillet over medium heat. Add mushrooms and cook, stirring occasionally, until browned. Stir in Worcestershire sauce. Remove from heat.
- In a large bowl, combine beans, mushrooms, soup, milk, cheese, salt, pepper and half of the onions.
- Pour mixture into prepared dish. Top with remaining fried onions. Bake 350 for 30 minutes.

Thanks, I have to admit, I am madly in love with this dish too! It will feed 4-5 as a side dish. You could double it if needed. I plan to do so on Thanksgiving. I haven't tried it yet but I don't see that it would be an issue. Happy Thanksgiving!

I've decided to make this for Thanksgiving this year. Do you think I could assemble it all (except for the fried onions) the day before and just put it in the oven the day of?

Yes, I think that would be fine, as a matter of fact, I plan on doing the same thing! Definitely hold off on adding the fried onions though until just before it's going in the oven because no one wants soggy onions 🙂 Happy Thanksgiving!

Did preparing the recipe the day before and then baking it the day of work okay? Or would you recommend to do it all the day of?

Yes! Just don’t put the crunchy onions on top until ready to bake, otherwise they will get too soggy overnight. Enjoy!

I am doubling this recipe, so I will need roughly 6 oz of french fried onions correct? The 2.8oz seemed like a strange amount in the recipe so I just wanted to double check. Thanks.

I know, the 2.8 measurement is weird but it's because that is size of French's small canister of onions. I do think the amount of onions is subjective to taste preference. What I am going to do when I double it for Thanksgiving is put about 3/4 C of onions inside the casserole and then just enough to cover the surface evenly. Probably about1 C or so. I hope that helps. I really should have made it doubled ahead of time to help everyone out 🙁
