Instant Pot Bone Broth - A rich, nutritious, collagen-rich ,versatile broth prepared in a few hours rather than a few days!
I most often make this bone broth with the carcass of a roasted chicken, rotisserie chicken but my favorite, is making it the day after Thanksgiving with leftover turkey carcass!
Feel free to play around with the herbs and seasonings. The recipe as written is for a basic bone broth but sometimes adding some fresh parsley stems, freeze-dried poultry seasoning etc. will give it a new flavor dimension.
I've even been known to toss a a package of mushrooms in there if I see I have some in the fridge that I won't use.
It wasn't until recently though, that I learned in order to really extract the good healthy bits from those bones, I would have to simmer them for days! Seriously, days. I had no idea.
Because my Instant Pot is great at reducing cooking times, I decided to make some Instant Pot Bone Broth!
Because I have an autoimmune disorder known as rheumatoid arthritis, my health can greatly benefit from the goodness in an actual bone broth.

How Do You Use Instant Pot Bone Broth?
You really can use bone broth in place of water in most of your recipes. Here are the most common ways that I use bone broth.
- soups
- mashed potatoes
- rice
- sipping
- simmer vegetables
How Do You Store Bone Broth?
Bone broth will last a few days in the refrigerator. I prefer to store in the freezer. I use 8 oz freezer safe jars like these ones. Storing the bone broth in small jars rather than one big container allows me to defrost just the amount I need. Also, this 8 oz size is the perfect size for warming up and sipping straight from the jar.
How Do We Make Instant Pot Bone Broth?
Place all ingredients in pot and add enough water to cover, just below the max fill line. Pressure Cook for 120 minutes.
Allow a natural release of pressure. Strain and cool.
Place in storage containers and store in refrigerator for several days or freezer for up to a year.
What Is The Deal With The Gel?
Apparently, once the broth is cooled completely, if it gels it's a wonderful thing.
The gel process occurs from all the collagen in the connective tissues. Sounds gross. Kind of looks gross. But it is good stuff, this I know.
If it doesn't gel that's okay too. It just means your bones weren't full of connective tissues or it could mean you just had a little extra water. I have made several batches and some gel and some don't.
Apple Cider Vinegar or Lemon Juice?
Up until yesterday, I have always used vinegar. I know vinegar helps break things down so I always toss in.
A friend, however, was texting me for instructions on making Instant Pot Bone Broth. Her doctor has advised her to sip on bone broth, however, she has some kind of disorder where can not have vinegar. She asked me about using lemon juice instead.
I googled it, saw that some people say yes and decided that I would try with the lemon juice to see for myself. I didn't notice a difference between the batch of lemon juice vs. vinegar. Use whichever you have on hand.

Equipment
Ingredients
- 2-3 pounds bones **See recipe notes for details
- 1-2 Sweet Onion quartered (skin can remain on)
- 3 cloves garlic no need to chop, just a quick whack with the flat side of the knife
- 2 carrots cut in thirds (no need to peel)
- 2-3 celery stalks cut in thirds
- 2 Tablespoon apple cider vinegar or lemon juice
- 1 Tablespoon peppercorns
- 1 ½ teaspoon dry thyme
- Filtered water
Instructions
- Place all ingredients into pot. Pour enough water to cover, just under the max fill line.
- Cover, set vent to seal. Set to manual, high pressure for 120 minutes.
- After the timer completes, allow a natural release.
- Strain broth thru a fine mesh strainer or a cheesecloth, or both.
- Allow strained broth to cool completely
- Place in storage containers and store in refrigerator or freezer for later use.
