Instant Pot Stuffed Pepper Soup - I've taken my stove-top version of Stuffed Pepper Soup and transformed it into an easy one pot meal made in the Instant Pot.

I was craving a warm hearty soup this week. Between the cooler temperatures outdoors and my non stop sinus issue, I just needed soup.
One problem. I was sick. I was cranky. And I didn't want to fuss with washing a big soup pan and then another pan that I'd have to prepare the quinoa in.
That's why I decided to go Instant Pot for this.
I can toss the Instant Pot pot/liner in the dishwasher and never give it another thought.
One more problem.
I actually don't know how to cook quinoa in an Instant Pot.
Note to self: Learn how to cook quinoa in an Instant Pot.
I was in no mood for researching and trial and error, so I looked around and saw that I had some brown rice in the pantry. Brown rice is healthy-ish, right?

Instant Pot Stuffed Pepper Soup
Ingredients
- 1 T corn or vegetable oil
- 1 lb ground turkey
- 1 C diced sweet onion
- 1 green bell pepper diced
- 1 yellow or orange bell pepper diced
- 2 cloves garlic minced
- 1 15 oz can diced tomato do not drain liquid
- 1 15 oz can tomato sauce
- 4 C chicken broth
- 1 teaspoon dry Italian seasoning
- 1 teaspoon salt I use kosher salt
- ½ teaspoon black pepper freshly cracked
- 1 C brown rice not cooked
Instructions
- Turn Instant Pot to Saute function. Once it reads "hot", add oil. Place onions and peppers in pot and cook 2-3 minutes, stirring occasionally. Stir in garlic and cook 30 more seconds.
- Add ground turkey to pot. Cook, stirring occasionally, until turkey is no longer pink.
- Season with salt, pepper and Italian seasoning.
- Stir in diced tomato and tomato sauce. Add the rice to the top (somewhat evenly) and pour broth over everything.
- Place lid on, seal and set to manual - high pressure for 13 minutes. When 13 minutes is up, allow pressure to naturally release.
- After natural release, stir soup and serve.
