Lower Carb Breakfast Quesadilla - A fun breakfast twist on a typical quesadilla, using lower carb tortillas.
Now that my youngest is at school 3 mornings a week, I find myself dropping her off and then coming home to enjoy a peaceful breakfast at least once a week. I haven't done this in ages. For as long as I can remember, I've just been running on coffee in the morning. I usually am so rushed getting the kids fed and then cleaning after, that I just don't have time to feed myself.
Pathetic, right?
I know.
I'm working on finding time to do things for myself. This breakfast thing is a big step. I mean, heck, I haven't had a pedicure in months, haircut in over 6 months. The least I can do is find time for breakfast every now and then, right?
And I'm talking a real breakfast, not the bagel Josh didn't finish before school and not the half eaten banana Nora left on the kitchen island.
So, why a quesadilla?
I know, it's not always the first thing to pop into mind when one thinks of breakfast.
I got the idea for this Low Carb Breakfast Quesadilla when this month's Degustabox arrived. As I was inspecting all the contents (I'll list them all in a minute), my eye was drawn to the La Tortilla Factory Low Carb Tortillas. I thought I would make dinner with them, but once the kids were off to school, I found myself drawn to them again. Before I had much of an idea of what I was doing, I found myself just automatically pulling the bacon, eggs and cheese out of the refrigerator and then it kind of just happened. And it was good.
Do you want to know my tip for the fluffiest scrambled eggs? You've got to get lots of air in them. I prefer to give mine a quick pulse in my Ninja Blender. If you don't want to deal with the blender, just whisk the heck out of them just before they hit the pan. That is it. Big secret.

Lower Carb Breakfast Quesadilla
Ingredients
- 4 Low Carb Tortillas such as La Tortilla Factory
- Scrambled eggs prepared, about 3 eggs
- ½ C shredded Mexican cheese
- 4 slices bacon
- 1 teaspoon butter
- Optional: guacamole salsa, sour cream, chives
Instructions
- Cook bacon, per package instructions in a skillet. Remove cooked bacon to a paper towel lined plate.
- Wipe off skillet with paper towels to remove most of the rendered bacon grease.
- Melt butter in same skillet over medium heat. Place 1 tortilla in heated skillet. Layer ingredients on bottom tortilla in this order: cheese, egg, 2 bacon slices, cheese and finally top with another tortilla. Cook until bottom tortilla is nicely browned and cheese is beginning to melt. Carefully flip over with a spatula. Cook other side another few minutes until crispy and cheese melted.
- Cut quesadilla into quarters and serve with optional toppings.
