    Marinated Pork Loin Sliders

    Marinated Pork Loin Sliders - These sliders come together easily using pre-marinated pork tenderloin.  A great answer to the problem of the back to school routine rush!

    Pork Loin Sliders

    Wow, the last couple of weeks have been complete chaos at my house. This is the first year that our two little ones BOTH have activities during the week. We held our breath hoping they wouldn't be scheduled on the same night and thankfully they weren't. They are, of course, scheduled right at dinner time!  Josh has soccer Tuesday at 5:30 PM and Nora has dance on Wednesday at 4:30. 

    I will admit on week one I hit a drive thru to get them kid meals and on week 2 we got pizza - don't judge.  I just couldn't figure anything else out.  It's tough to figure out how to get dinner on the table when you have kid activities.  Getting into this back to school routine is overwhelming.  Who the heck can remember to marinate something?  Not me.  So when I saw these marinated fresh pork products , I figured it was worth a try.

    Pork Loin Sliders

    While I do like to play around with creating my own flavors, on these busy nights, I certainly welcome a few shortcuts.  I noticed there were quite a few new flavors of the Smithfield® pork products but I chose the Portobello Mushroom Pork Filet.  These pork loins cook up fairly quickly and while it's cooking away I can get the other components ready.  Everything is on the table by the time the kids have both showered. 

    I love caramelized onions.  I know what you're thinking....don't those take a lot of time?  They take about twenty minutes. So, here are three solutions/options. 1. You can either make them ahead of time like I do.  I like to make a batch of caramelized onions a couple of times a month.  You can refrigerate them and use them as needed for your recipes.  2. You can also get them cooked while your pork is cooking.  Since the pork is "pop in the oven" ready, you can use that cook time for the onions.  3. Lastly, you can buy them pre-made.  There are a lot of jarred varieties found in the grocery store these days. Either way.  It's easy, I promise.

    Pork Loin Sliders

    When I set out to make these sliders, I knew I wanted to use a cheese spread.  My plan was to buy an herbed cheese spread or an herbed cream cheese but then in the deli cheese section I saw a Gorgonzola cheese spread.  I ended up buying both because my kids aren't too keen on Gorgonzola but I am.  You can decide which best suits your tastes.

    For a nice cool, crisp texture I sliced some fresh pears super thin.  I think apple would also be a good if you don't have pears.  You know me, all about the versatility.

    Once the pork is done, slice it thin and pile it on a toasted roll with the pear, cheese spread and onions.  Seriously good food and it came together in just over a half hour!  Take THAT busy schedule!  No more drive thru for us!

    Ingredients
      

    • 1 Smithfield® Portobello Mushroom Pork Loin
    • 2 C Caramelized Onions made ahead - see below for instructions or jarred
    • 4 oz Herbed Cream Cheese or Gorgonzola cheese spread
    • 4 Ciabatta Rolls
    • 2 Pears thinly sliced

    Instructions
     

    • Preheat oven to 375.
    • Place pork loin in a shallow pan and roast for 20 minutes per pound.
    • Meanwhile, reheat onions in a skillet for 5 minutes over medium heat.
    • When pork loin is cooked thru, let rest 5 minutes and slice thin.
    • Slice rolls in half. If desired, toast the rolls for 5 minutes in the oven at 400.
    • Spread the cheese spread on the top half of the rolls.
    • Layer pork slices, pear slices and onions in the roll and serve.

    Caramelized Onions

    • T butter
    • large sweet onions
    • Melt butter in a large skillet over medium heat. Add onions. Let cook 5 minutes. Stir. Continue to cook until softened and caramelized; about 20 minutes. Stirring, but not often, only every 5 minutes. Set aside

      We love those marinated pork loins, usually we grill ours but this combo looks like a great quick fix for those kid busy evenings will have to give this recipe a try!

      Those marinated pork tenderloins look really good. I've only bought pre-marinated pork once. I like the choice of flavors that Smithfield has...yum.

      No judgment here -- kids' activities are so hard on dinner plans! We have the same problem, so it's nice to know there are alternatives to fast food. 🙂 The sandwiches look great!

        Thanks Sharon. I definitely preferred the Gorgonzola cheese spread to compliment the pears but the rest of the family preferred the herbed cream cheese.
