I've been on a bit of a baking spree lately. Here I am always telling you I hate to bake and then I start baking every other day. I guess I do bake. Who knew?
I don't really have a good reason either. There was no big epiphany or anything like that. Perhaps, the reason is, I'm finding myself with a little more kitchen time. Dinner has been ready super quick lately thanks to my new Instant Pot. Or maybe it's just because Easter is approaching and I associate Easter with sweets.
Who knows the reason but my family sure isn't complaining. The kids seem to love these M&M Filled Cupcakes the best out of all the recent desserts. I'm torn between these and the Easter Peeps Chocolate Tart. They're so different from each other but both so good. Tough call.
At first you are probably going to assume these M&M Filled Cupcakes are difficult to make. Don't let your mind go there. It turns out, they're super easy. As per my usual baking escapades, this one starts with a boxed mix. You can use any variety but I used one that had sprinkles in it. It wasn't funfetti but it was pretty much the same idea. I thought the colors would be fun and spring-like, despite the blizzard that was happening outside.

M&M Filled Cupcakes
Ingredients
- 1 box cake mix + ingredients called for on box
- 1 batch icing I used this recipe: http://allrecipes.com/recipe/174347/quick-and-almost-professional-buttercream-icing/, enough for 24 cupcakes
- 2 C m&m candies
Instructions
- Follow instructions on box to create cupcakes. Bake and cool on a wire rack.
- Once cupcakes have cooled, use a paring knife to hollow out the center of the cupcake, being sure to save the piece you remove. Fill the hole with m&ms. Take the top portion of the cupcake that you removed and trim the pointy end off. Place top back on cupcake, covering the m&ms.
- Prepare icing.
- Spread icing over the tops of cupcakes or use a piping bag and decorative tip to ice cupcakes (I used Wilton 1M tip)
Notes
Quick notes on M&M Filled Cupcakes
- I made these seasonally appropriate for Easter, using the pastel M&Ms. Change them up according to season by changing the colors of M&Ms.
- I use a homemade buttercream icing because I find it easier to pipe but you can frost with whatever icing you prefer
- For an added touch before serving, I sprinkled a few sparkly sugar crystals on top
- To create the flower looking design I used the Wilton 1M piping tip
