Not Quite Korean Beef Noodles - A noodle bowl that has the idea of Korean Beef but lightened up with lean ground chicken.
Okay, so my title is rather confusing, isn't it. This dish is actually not a beef dish but rather a lean ground chicken dish. I know you need some explanation, so here goes.
As you know, I am so in love with Asian flavors. I've been trying (see here, here and here for examples or browse my full collection) to experiment with Asian flavors and recreating restaurant dishes at home. I also have been trying to lighten up my dinners lately too, so I decided to combine those two concepts and go for a lighter Asian dinner.
I started googling some Asian recipes that included the ingredients I had on hand and I kept coming up with recipes for Korean Beef. Mind you, I haven't got a clue what Korean cuisine actually is. I also knew I didn't have beef on hand.
I took the general idea of the recipes I found over at The Girl Who Ate Everything and Lizzy Writes and added (and subtracted) a few things. I'm not sure if what I did still puts this dish in the Korean category or not. Forgive me if not. Part of me thinks it tastes more like Thai, but either way, let's just agree to say this is a flavor packed Asian dish. Deal?

Not Quite Korean Beef Noodles
Ingredients
- 1 T olive oil
- 1 lb ground chicken
- 2 carrots finely diced
- 1 sweet onion diced
- 1 lb broccolini
- 2 T brown sugar
- ¼ C soy sauce
- 1 T sesame oil
- 1 teaspoon fish sauce
- 2 garlic cloves minced
- ½ teaspoon crushed red pepper
- 8 oz rice noodles
- Optional garnishes: chopped green onion chopped peanuts
Instructions
- Prepare rice noodles according to package. Set aside.
- In a large skillet, over medium/high heat, heat oil and add ground chicken. Cook until chicken is cooked through. Remove chicken with a slotted spoon and set aside of plate.
- Return skillet to burner and add onion, broccolini and carrot. Cook 5 minute, stirring occasionally.
- While veggies are cooking, in a small bowl, whisk together brown sugar, soy sauce, sesame oil, fish sauce, garlic and red pepper.
- Add prepared noodles to skillet and toss well, reduce heat to medium/low. Add sauce to skillet and toss with tongs, well to incorporate sauce. Cook 2-3 minutes more and serve immediately.
- Garnish with chopped green onions and/or chopped peanuts, if desired.

Love the title. I have been right there with ya on ingredients but not sure what the cuisine actually tastes like. But you've presented something delicious looking! I'd eat it.

This sounds so delicious! I would love to try to make more Asian food-- we love it, but my mom is allergic to MSG, so most asian restaurants are out. I'll have to try your recipes!
