One Pot MANWICH Shepherd's Pie - A family friendly, comfort food meal that is ready in under 30 minutes and made in one pan for easy clean up!
So there are two major storm types we get here in Massachusetts; hurricanes in summertime and blizzards in the winter. It's February 16th, so guess which one I'm going to talk about today?
Oh, you are so good, you are right, those pesky blizzards.
Here's what happens when we are expecting a blizzard. Everyone runs out to the store to buy milk and bread. It's total mayhem. I mean, you can't even find milk most times because it's gone. Everyone is doing this that is, except me. If I am losing power in one of these bad boys, the last thing I want is milk. No, sir. Not me. I take a leisurely stroll down the canned foods aisle at Walmart (while everyone else is fighting a few aisles down, over milk) and stock up on things that will actually survive a storm, like MANWICH.
I thought it would be fun to make something a little bit different out of MANWICH. Since Shepherd's Pies (One Pot Mexican-ish Shepherd's Pie & Individual Leftovers Shepherd's Pie) have gone over so well in the past, I thought, what the heck. Let's do it.
Now, you guys know me by now. Whenever I use a store bought (pre-made) ingredient, I like to throw something fresh in there too. Good thing they also sell carrots at Walmart.
Do your kids eat carrots? Mine are hit or miss. Most recently, every vegetable seems to be a miss so I've been having to hide them - GASP! If you promise not to tell my kids they are eating veggies, I'll share with you my kitchen hack for hiding veggies.
KITCHEN HACK #1- Hide The Veggies! Chopping the veggies won't do. Kids are smart. You've got to grate the veggies very finely. I find that a hand held cheese grater works great for this. The carrots (or celery, or whatever) come out so fine they won't know!
KITCHEN HACK #2 - If you buy extra lean ground beef you don't have to take the time to drain the grease from your pan.
KITCHEN HACK #3 - Perhaps not an actual hack but whenever you are using an oven safe skillet, upon removing the pan from the oven, immediately place an oven mitt or towel around the handle. I have learned this the hard way.
Okay, so back to the actual recipe. Here's the gist. Brown your ground beef and shredded carrots. Stir in one can MANWICH. Top everything with a layer of mashed potatoes and pop it in the oven for about 10-15 minutes. Quick note about the mashed potatoes. I've grown very fond store bought pre-made mashed potatoes. You can use those if you want or you can use up your leftover homemade mashed. Whatever is easier.
Voila, a hearty comfort food dish that will please the entire family and it is ready in under 30 minutes!
*Looking for a make ahead meal? No problem, follow the recipe but do not bake. Cover and place in refrigerator until ready to bake (up to 24 hours). Uncover and bake but increase bake time to 35-40 minutes.*

One Pot MANWICH Shepherd's Pie
Ingredients
- 1.5 lb Ground Beef Lean
- ⅓ C Grated Carrots
- 1 15.5 oz Can MANWICH
- 20 oz Mashed Potatoes prepared
Instructions
- Preheat oven to 425.
- Place ground beef and carrot in a large, non stick, oven-proof skillet over medium/high heat. Cook, stirring occasionally until beef is no longer pink. Stir in MANWICH. Reduce heat to medium and cook just until warmed though. Remove from heat.
- Spread prepared mashed potatoes over the top of MANWICH mixture.
- Place pan in oven and bake 10-15 minutes, just until potatoes start to brown slightly.
- Remove from oven.
- Allow to sit 5 minutes before serving.

love the idea, have to make it for a church supper,about 20 or 30 people, could I make it in big electric skillet (16 inches)? sounds delish.and the kids will love it.

You could make it in an electric skillet, however without baking it, your potatoes won't firm up and make a "crust" but I think it would still be delicious.
