    Oven Roasted Potatoes and Vegetables

    Oven Roasted Potatoes and Vegetables is a tasty and easy side dish recipe for any occasion from holidays to weeknight dinners.

    This flavorful vegetable side dish recipe is super versatile. Change up the vegetables to suit your tastes!

    No need to fuss with a bunch of seasonings, this roasted vegetable dish is seasoned with one simple shortcut ingredients - bottled Italian dressing!

    This potato and vegetable side dish goes great with my easy roasted chicken, air fryer crispy boneless pork chops, Grilled Chicken Wings and Crunchy Onion Pork Chops.

    Ingredients

    The beauty of this side dish recipe is that you can change up the vegetables and amounts to suit your personal tastes. This recipe is more of a suggestion or idea than a solid, stick to it, recipe.

    • Potatoes - baby red potatoes
    • Vegetables - carrots & green beans
    • Seasonings - zesty Italian dressing

    Some alternate vegetables that would work well would be parsnips, cauliflower, broccoli or brussels sprouts.

    Because all the flavor is coming from the dressing, be sure to choose one with big flavor that you enjoy. I prefer one labeled "zesty" or "robusto".

    Cutting vegetables for roasting

    The key here is cutting vegetables into equal sizes for even cooking.

    Ingredients
      

    • 8 small red potatoes quartered
    • 4 or 5 medium carrots sliced lengthwise and then cut into large sticks about 1-2 inches long
    • ¼ to ½ pound green beans
    • ½ cup Italian dressing zesty or robusto variety

    Instructions
     

    • Preheat oven to 425.
    • Toss potatoes with ¼ cup of the dressing. Place potatoes on a baking sheet
      and roast 15 minutes.
    • Remove baking sheet from oven and give the potatoes a little turn. Toss carrots and beans with remaining dressing and add carrots and beans to the baking sheet with the potatoes and return to oven. Roast an additional 20-25 minutes. Serve warm.

      do you add the other 1/4 cup of dressing when you add the carrots and broccoli?

      Could you include fresh asparagus instead of the green beans? I only have canned green beans.

        Hi Amanda. I think asparagus would work fine. I've never tried it. If you are afraid of it overcooking, I would suggest adding it to the mix after you give the potatoes a toss, just for the last 25 minutes or so. I'd love to hear how it comes out.

      I have a couple chicken breasts I cooked yesterday with Italian seasoning on them. Can I slice them up and add like a casserole?

        I think that would be fine. The only concern I might have is if the chicken would dry out with the cooking times. Perhaps add halfway thru cooking time, giving it just enough time to re-heat but not dry out.
