    Pesto Alfredo Meatball Subs - A quick and easy weeknight meal using pre-made meatballs and a few items from your pantry.

    Pesto Alfredo Meatball Subs

    Before you guys call BS on me calling this a recipe, I'll be the first to say, there is zero skill required with this "recipe".  I can't even call it a recipe because, it's just so darn easy and there isn't really any technique used.  Basically if you can open a jar and toast things in your oven, you are golden.  This is for you.

    Okay, so I know, I'm not exactly selling this, huh?  Well, let me tell what is great about it.  Well, it's delish, for one.  For another thing, it's perfect for a busy weeknight meal. 

    Pesto Alfredo Meatball Subs

    I lightened things up by using frozen (gasp!) turkey meatballs.  I also used a jarred (yes, jarred) Alfredo which was light as well.  Since I'm already in the doghouse for using premade product; well, I used jarred pesto too!  I'm terrible. 

    No, not really.  I'm just practical.  It's not every night of the week I can whip up a meal from scratch.  If you can, well then, that's great for you, but I can't.

    Here's what I did.  I baked the frozen meatballs.  While the meatballs are cooking, I mix together a jar of Alfredo sauce and 2 T basil pesto in a saucepan, just to heat it.  Then I put a little of the Alfredo mixture inside the sub roll, top with some Pesto Alfredo and Provolone cheese.  I pop that in the oven at 450 just until the cheese is melted and bubbly.  Done.  Dinner.  Just like that.

    Ingredients
      

    • 16 Frozen Turkey Meatballs
    • 14 oz Alfredo Sauce any variety, I used light
    • 2 T basil pesto
    • 4 slices provolone cheese
    • 4 sub rolls

    Instructions
     

    • Cook meatballs according to package.
    • In a medium saucepan, stir together Alfredo sauce and pesto over medium/low heat, just until warmed through.
    • Spread some of the sauce in each roll. Place 4 meatballs in roll, top with more sauce. Cut each slice of provolone in half and place 2 halves on top of each sub to cover sub.
    • Place subs on baking sheet and cook in oven at 450, about 5 minutes, just until cheese is melted and roll is toasted.

      That's actually a really awesome idea. I have never tried turkey meatballs, though I have been wanting to.

      I have no problem using canned and jarred stuff. Sometimes, especially if you have a family, there is NO TIME for "real" food. You gotta do what you gotta do.

        Thank you so much Liz. Some of the store bought turkey meatballs are really good. We probably have turkey meatballs more often than beef these days.

      Can you use mozzarella cheese and not use the pesto? Also, how long do you cook the Alfredo sauce? Been wanting to try this for awhile now.

        Yes, you can certainly use mozzarella instead of provolone. The Alfredo sauce just needs to be warmed up so just a few minutes. Enjoy.
