    Pulled Pork Polenta Bowls

    Today we are making Pulled Pork Polenta Bowls; a tasty way to re-purpose leftover pulled pork.

    Tell me, have you ever made a small amount of pulled pork?  Probably not.  I know I never have.  Typically, pulled pork happens at my house when a big hunk of pork is on sale.

    Unfortunately, we end up with a good amount of pulled pork left over.  Two of my kids aren't big into pulled pork, so it's just three of us eating it and we can only eat sandwiches or tacos so much.  You might remember that I'm not huge on leftovers to begin with.

    It's hard to even call these Pulled Pork Polenta bowls a recipe, more like an idea or a suggestion.  Add or leave out any ingredients you aren't a fan of.  It's one of those "do as you like" kind of recipes.

    I don't really want to waste your time telling you how to make pulled pork or polenta.  I think most of us have our favorite recipes.  If you need a little guidance for those recipes, I'm including a few recipes my blogger friends have shared.

    Pulled Pork Polenta Bowl

    Servings 4

    Ingredients
      

    • 2 C Prepared Polenta
    • 2 C Prepared Pulled Pork
    • ¼ C diced red onion
    • ¼ C pickled jalapeno
    • 1 avocado sliced or diced
    • 1 C shredded cheddar cheese I prefer a cheddar blend
    • 4 T BBQ sauce

    Optional Toppings

    • diced pineapple
    • diced mango
    • chopped scallions
    • chopped cilantro
    • sour cream

    Instructions
     

    • Divide the polenta among 4 serving bowls and top each with pulled pork.
    • Add all other ingredients on top, ending with the BBQ sauce.
    • Enjoy!
