    Pumpkin Cheesecake

    This Pumpkin Cheesecake embodies all the wonderful flavors fall has to offer.  Perfect for the holiday dessert table or a day when you just feel like splurging on something delicious.

    There are clearly two camps this time of year; the pumpkin lovers and the pumpkin haters. I happen to fall into the first category. Bring on the pumpkin; give it to me in lattes, cakes, muffins, butter; I want it ALL!

    Pumpkin Cheesecake

    This pumpkin cheesecake is every bit as creamy and decadent as any other cheesecake; just with pumpkin deliciousness.

    I use graham crackers in the crust and season them but I would imagine using ginger snap cookies in place of graham crackers would be divine.

    Pumpkin Cheesecake

    No Water Bath? What?

    I know a lot of you won't even think about baking a cheesecake unless it's in a water bath. I'm sorry but I'm a bit of a lazy baker and I really don't have the time or patience to do it.

    You're probably wondering if this cracks on top without the bath. Yes and No. Every time I have made this cheesecake (and other cheesecakes) I might end up with just a crack or two BUT I have a fix!

    BEST TIP EVER (for lazy bakers like me)

    Sour cream! It might sound weird but just before the cheesecake is done baking, I season some sour cream and spread it across the top. Finish baking and smooth perfection. Covers up any cracks that might be forming!

    Pumpkin Cheesecake

    As usual, I have one quick note about this recipe.  Don't be intimidated by the ingredient list.  It sounds like a lot, but it isn't difficult, at all.  If you like fall flavors, you've got to try this.  I know it will be on my Thanksgiving table this year.

    My recipe for Pumpkin Cheesecake is adapted from Olive Garden Pumpkin Cheesecake which I found on CopyKat Recipes.

    Pumpkin Cheesecake – #WIN a KitchenAid Mixer

    Ingredients
      

    Crust

    • 1 stick 8 T melted butter
    • 2 ½ C graham cracker crumbs
    • ÂĽ C sugar
    • ½ teaspoon cinnamon
    • ÂĽ teaspoon nutmeg
    • ÂĽ teaspoon ground ginger

    Filling

    • 24 oz cream cheese softened
    • 2 teaspoon vanilla extract
    • 3 eggs
    • â…” C brown sugar
    • ½ teaspoon cinnamon
    • ½ teaspoon nutmeg
    • ÂĽ teaspoon ground cloves
    • ÂĽ teaspoon ground ginger
    • 15 oz canned pumpkin

    Top Layer

    • 1 ÂĽ C sour cream
    • ÂĽ C sugar
    • 1 ½ teaspoon vanilla extract
    • ÂĽ teaspoon cinnamon
    • ÂĽ teaspoon nutmeg

    Optional toppings/garnish

    • Caramel sauce prepared
    • Whipped cream prepared

    Instructions
     

    • Preheat oven to 350.
    • Stir together crust ingredients and press into a 9 inch springform pan. Be sure to bring the crust up the sides a bit.
    • Using an electric mixer, beat cream cheese. Add vanilla and eggs, one at a time and continue to beat until smooth. Add in the brown sugar, cinnamon, nutmeg, cloves, ginger and pumpkin and mix until smooth.
    • Pour filling into crust and bake for 30 minutes. After 30 minutes, reduce heat to 325 and bake for 30 more minutes (total cook time 60 minutes). Remove from oven (keep oven set to 325).
    • Stir together all Top Layer ingredients and spread over cheesecake. Place back in oven and bake at 325 for an additional 10 minutes.
    • Allow cheesecake to cool completely and then store in refrigerator.
    • When ready to serve drizzle with caramel sauce and/or whipped cream if desired.
