Sausage Pierogi Alfredo Bake - This comforting casserole uses frozen pierogies, ground sausage and jarred Alfredo sauce for an easy weeknight dinner.
Picture this:
It's March. Last week, there were record breaking warm temps in the 60s. Then a Nor'Easter happened. Floods. Wires down.
And the most serious offense of the storm of all...... the kids have no school!!!
Seriously though. It was a whopper of a storm and lots of people around here lost a lot. Major flooding ruined so many homes. Trees fell on houses and on cars. People were injured and 7 people died.
No joke. The storm came in on Friday and it came in fierce. Most people in my area were without power by mid day Friday. Today, as I type this (Tuesday afternoon), some still don't have power.
No heat.
No electricity.
No hot water.
No nothing.
It's awful.
My family was very lucky. And I am a thankful girl today.
The worst that happened to us was that our neighbor's shed, lifted right up off the ground, flew up and over our fence. Serious Wizard of Oz moment. If I hadn't seen it with my own eyes, I wouldn't have believed it.
Anyway, what I'm getting at in a very long-winded boring way, is that while last week I was all about lightening things up with salad for dinner, this week, I'm craving some serious comfort food.
Making a big intricate dish isn't happening though, because MY KIDS STILL HAVE NO SCHOOL.
Apparently, one of the schools doesn't have power and it is too dangerous to send the kids because there are still some downed wires.
Sigh.
Enter the convenience foods. A jarred this, a frozen that and voila, dinner is served. Judge all you want, this was frickin' good.
Here's the run down:
First, brown your sausage.
Next, soften some onions. This is optional. If you buy the onion flavored pierogies you could skip it. Up to you.
After that,layer it all up in a casserole dish and top with Alfredo sauce.
Bake it.
Throw some cheese on top and bake it some more.
Now you eat it.
Last step, smile at how satisfied your belly is. Ahhhhh.

Pierogi Alfredo Bake Recipe Notes:
- If your skillet is large enough and oven- safe, make this a one pot meal by layering it all in the same skillet you brown the sausage in.
- No ground sausage? Try diced chicken, smoked sausage or ground beef.
- Cheese - Switch up the cheddar to a mozzarella or monterey jack blend.
- Not a fan of Alfredo sauce? Switch it up to a marinara!
- Optional garnish: chopped green onions or parsley

Sausage Pierogi Alfredo Bake
Ingredients
- 12 frozen pierogies
- 1 lb ground sweet Italian sausage or sausage removed from casings
- 1 C sliced sweet onions optional
- 15 oz Alfredo sauce
- 1 ½ C shredded cheddar cheese
Instructions
- Preheat oven to 350 F.
- Brown sausage in a non-stick skillet over medium heat, breaking up with wooden spoon as it cooks. Once no longer pink, remove from pan with slotted spoon and set aside on plate. Pour off the rendered grease, however, don't wipe out the pan (we're using that to soften the onions).
- Place the skillet back over medium heat and add the onions. Cook 3-4 minutes, just until starting to soften. Remove from heat.
- Add frozen pierogies to a 9x13 baking dish. Top with cooked onions and sausage. Pour Alfredo sauce over the top. Cover with foil and bake 25 minutes.
- After 25 minutes, remove the foil and sprinkle the shredded cheddar cheese over the top. Return to oven and bake an additional 10 minutes.Allow to sit 5 minutes before serving.
