Yes, this is a 3-ingredient dip!
- RO*TEL tomatoes - I do prefer this brand but if you can't find them, grab any knock-off brand of diced tomatoes with chilies
- Cheese - Yes, I'm using Velveeta. Velveeta has a time and place and this is one of those times. Trust. The other place it belongs is in my kids favorite mac and cheese recipe.
- Sausage - Country-Style Sausage
The "spicy" in this spicy queso actually comes from the tomatoes. If you want it even spicier, try using a spicy sausage!

Instructions
If you are going to serve this spicy queso dip as a Halloween Dip out of a pumpkin, make sure you prep the pumpkin before starting the dip.
How to hollow a pumpkin into a bowl
Carefully cut the top from a small-ish pumpkin. I like to use an electric knife for this.
Scoop out the pumpkin "guts" and seeds. Don't forget to save the seeds for roasting later.
Once the pumpkin is pretty smooth on the inside, set it aside and prepare the dip.
Preparing the Dip
Cube the Velveeta and place in a microwave safe bowl along with the Rotel and cooked sausage.
TIP: Cook the sausage earlier in the day so it is ready to go when you want to prepare the dip!
Microwave for about three minutes.
Stir to combine and place back in microwave for another two minutes.
If you aren't into using a microwave, no worries, just heat it all in a saucepan and stir occasionally.
Serve as is or place dip inside of the hollowed pumpkin.

- Vegetables - Carrots and celery

- Spicy - Make this sausage queso even spicier by using spicy sausage!
- Seasoning - Add a packet of taco seasoning to change the flavor profile.
- Stir-Ins - Try adding corn. Trader Joe's has a great frozen roasted corn.

Spicy Sausage Queso Dip
Ingredients
- 16 ounces Velveeta or similar product cut into ½ inch cubes
- ½ pound mild country sausage cooked & drained
- 10 ounce Diced Tomatoes & Green Chilies undrained
Instructions
- Mix ingredients in microwavable bowl.
- Microwave on HIGH 5 minutes or until cheese is completely melted, stirring after 3 minutes.
