This weekend I finally made time to get into my attic to pull out all the fall decorations. Once I was putting out the decor, I really started to get into the Halloween spirit.
While I was doing all this decorating, my husband was watching football. I started looking for fall or Halloween recipes that would be good for watching football too. While I was searching the internet for a good but easy recipe, I stumbled upon this Spicy Sausage Queso Dip Recipe.
I decided that this dip was hearty enough for watching football but would be easily transformed into a fun Halloween recipe by the way I could serve it. The feature ingredient is RO*TEL®. You can almost always find a can of RO*TEL® in my cabinet. It’s such an easy way to add a little zest to your recipes.
I’ve got TWO fun festive ways to serve up this Halloween Queso. If you plan to serve the queso with veggies, just arrange your veggies on a platter or board in the shape of a skeleton. It can be super scary or super silly. Skipping the veggies? Sure, just plop the dip inside a pumpkin and serve with chips!
HOW TO MAKE A VEGGIE SKELETON DIP
The skeleton is easy, just chop up veggies of your choice and arrange them! You can even buy veggies that are already chopped up if you really want to go easy. Sliced red peppers make great “ribs”. Cucumber slices for the spinal column. Carrots & celery for the limbs. The dip bowl is the skull and just because I think it’s fun, I add in broccoli for a big old head of hair. Yes, I know skeletons don’t have hair but I choose to make it fun! This display is bold and adventurous, just like RO*TEL®!
SEE HOW EASY THIS SPICY SAUSAGE QUESO DIP IS TO MAKE IN A PUMPKIN
To start, carefully cut the top from a small-ish pumpkin. I prefer to use an electric knife for this. Scoop out all the pumpkin “guts” and seeds. Be sure to set those seeds aside for roasting later.
Once your pumpkin is ready, set it aside and get the dip going. It’s super easy.
Chop up your cheese and place in a bowl with RO*TEL® and cooked sausage.
Toss the bowl in the microwave for 3 minutes. Stir it all together and put back in for another two minutes and it’s done. Seriously, that’s it. My kind of recipe!
Place dip inside prepared pumpkin or in a bowl if you want to skip the pumpkin and serve with tortilla chips.

A hearty cheesy dip for any occasion that I've dressed up for a spooky Halloween spread! Only three ingredients needed for this Spicy Sausage Queso Dip!
- 16 oz Easy Melt Cheese Block cut into 1/2 inch cubes
- 1/2 lb mild country sausage cooked & drained
- 10 oz can RO*TEL® Original Diced Tomatoes & Green Chilies undrained

Mix ingredients in microwavable bowl.

Microwave on HIGH 5 minutes or until cheese is completely melted, stirring after 3 minutes.
If serving with a veggie skeleton - chop vegetables and arrange as in picture using the bowl of dip as the skull/head.
If serving with tortilla chips - cut top from pumpkin, clean out pumpkin and place prepared dip in pumpkin and serve next to a bowl of chips
Don’t forget your re-usable Walmart Shopping Bag when you head out for your ingredients!
