    Sheet Pan Chicken Drumsticks

    When you prepare these Sheet Pan Chicken Drumsticks you can expect a budget-friendly meal that tastes great, cooks up in under an hour and is a complete sheet pan meal!

    How great is that?

    With the cost of groceries continuing to rise, this one pan meal comes together for under $15.

    First things first. This easy chicken dinner recipe was originally published by me in 2016 under the name "Sheet Pan Chicken Legs". It has come to my attention most people just like to call them chicken drumsticks so I've edited the post in 2023 to reflect that change.

    Ingredients

    In addition to giving you the list of ingredients, I'm going to show you the cost of ingredients.

    • Chicken Drumsticks (AKA Chicken Legs) - $1.49 per pound
    • Fennel - $2.99
    • Onion - $.99
    • Garlic - $.99
    • Orange - Zest & Juice - $1.00
    • Potatoes - $3.00
    • Fresh Parsley - $1.99
    • Salt, Pepper, Olive oil and Dry Thyme

    I'm not going to account for the usual things like oil, salt, pepper and dry thyme as I think most people already have those ingredients in their homes.

    The other thing I'm doing is telling you the cost of these items as a whole. Keep in mind, you will probably have extra on hand to them use in another meal.

    Other blogs will break down per unit etc. but I'm trying to keep it simple.

    The prices reflected are the prices at my nearest grocery store so prices will be different for you depending on your location.

    TIP - Save even more money by skipping the parsley. While I love the brightness parsley gives to finish a dish, you could skip it if need be.

    All ingredients arranged on a sheet pan, seasoned and ready to go in the oven.

    Instructions

    Arrange the chicken on a sheet pan.

    Spread the onion, fennel and potatoes around the chicken.

    In a bowl, whisk together the rest of the ingredients (except the parsley) and pour over everything.

    Roast until chicken is cooked through and vegetables are tender.

    Substitutions

    Chicken - Try chicken thighs instead of drumsticks or use a combination of both.

    Vegetables - Swap out the potatoes for sweet potatoes. Not a fan of fennel, try leeks.

    Seasonings - If you don't have dry thyme on hand, try dry Italian seasoning.

    Equipment

    • Sheet Pan
    • Mixing Bowl
    • Quick-Read Thermometer

    Storage

    Keep leftovers in a sealed container in the refrigerator for up to 3 days.

    Food Safety

    • Be sure chicken is cooked to 165 degrees F.
    • Do not use the same utensils on cooked chicken as you did on raw chicken.
    • Wash hands after touching/handling raw chicken.

    Ingredients
      

    • 2 pounds Chicken Drumsticks approximately 8-10 drumsticks
    • 1 bulb Fennel sliced
    • 1 medium Onion sliced
    • 2 cloves Garlic sliced
    • 3 medium Potatoes cubed
    • 1 whole Orange zest & juice
    • 1 teaspoon Coarse Sea Salt
    • ÂĽ teaspoon Thyme dried
    • ÂĽ teaspoon Black Pepper freshly ground
    • 2 tablespoon olive oil
    • Optional 2 T chopped parsley for garnish

    Instructions
     

    • Preheat oven to 400 °F
    • Place chicken legs on sheet pan. Spread vegetables around and in between legs on pan.
    • In a small bowl whisk together orange juice, zest, garlic, thyme and olive oil. Pour mixture over chicken and vegetables. Season everything with salt and pepper.
    • Roast at 400 for 45 minutes or until chicken is cooked through and vegetables have softened.
