Temperatures today are again in the high 90s. We have officially declared a heat wave on the East Coast. So am I turning on my oven? Not a freak'n chance of that! I look to the grill and really can't imagine standing in front of a flame right now either. So out comes the trusty slow cooker! Thank you slow cooker, you have saved me from the sweat and complaining that was sure to come w/ cooking in the oven or on the grill.
I have boneless chicken breasts in the fridge so I'll start there. Today I'm making BUFFALO CHICKEN SANDWICHES. Sort of a play on pulled chicken sandwich but with a nice kick! Why not! I have enough chicken that I will use the leftovers tomorrow in something else. What you ask..... Take your pick:
Start with the base recipe, which is of course, for the shredded buffalo chicken and then use it in any of the recipes below.
Ingredients:
3-4 boneless chicken breasts
½ bottle hot sauce, such as Franks Red Hot
1 envelope dry ranch dressing
2 T butter
Instructions:
Place chicken in slow cooker. Add dressing mix and hot sauce. Set to low for 5 hours. After 5 hours, remove chicken and shred. Return to slow cooker, add butter and stir to coat. Continue to cook one more hour.
