If you like the combination of sweet and smoky you'll love these easy to make Slow Cooker Pulled (Cherry Chipotle) Sandwiches.

Lots of pulled pork and pulled chicken recipes call for soda. The thing is I'm using cherry flavored soda. The slight cherry flavor pairs great with the chipotle BBQ sauce.
Ingredients

- Boneless Chicken Breast
- Cherry Soda
- Spices - Salt, Pepper and Garlic Powder
- Chipotle Flavored BBQ Sauce
Instructions

Season the chicken with salt, pepper and garlic powder and place in slow cooker.
Add a cup of the cherry soda and cook in the crockpot. My crockpot runs hot so I only needed four hours. Most probably will go 6 hours.
Remove the chicken from the slow cooker and place on a cutting board. Shred the chicken.
How to shred chicken: There are several methods to shred chicken. For me, the easiest is to just use two forks. Other options are to use meat claws or a hand mixer.
If there are any unsavory bits floating around in the slow cooker, use a slotted spoon to remove.
Return the shredded chicken back to the slow cooker and stir in the BBQ sauce.
Replace the cover and allow it all to hang out on the low setting for about a half hour.
After about a half hour, you can make a sandwich out of the chicken.
I would highly recommend, using toasted brioche rolls.

Cherry Chipotle Slow Cooker Pulled Chicken
Equipment
- Slow Cooker
Ingredients
- 2 Pounds boneless chicken breast
- 1 Teaspoon salt
- ½ Teaspoon black pepper freshly cracked
- ½ Teaspoon garlic powder
- 1 Cup Cherry flavored soda
- 1 Cup chipotle BBQ sauce
Ingredients For Use In Sandwiches
- brioche rolls or preferred rolls
- 1 avocado sliced
Instructions
- Spray slow cooker with non-stick spray or line with a liner.
- Season chicken with salt, pepper and garlic powder. Place in the slow cooker. Pour 7UP over chicken. Cover and cook 4-6 hours on low.
- Remove chicken from slow cooker and place on cutting board or dish. Using a slotted spoon, remove any visible fat that might remain in slow cooker. Shred chicken and place back in cooker.
- Stir BBQ sauce into chicken. Replace cover and cook 30 minutes on low.
For Use In Sandwich
- Preheat oven to 450.
- Place opened brioche rolls, cut side up on baking sheet and toast in heated oven 5 minutes or just until toasted.
- Place shredded chicken on rolls and top with avocado and/or preferred sandwich toppings.

My family LOVES cherry 7-up so I know these would be a hit. I also feel ya on your dinner issues. My husband used to commute 1 1/2 hours each way to work (we live in the very busy suburb area of D.C) and dinnertime was always a struggle because of his late schedule getting home.
