I made this salad in under 10 minutes.
Seriously, it was probably closer to 6 or 7 but I'll add a few extra minutes on for those who don't chop as fast as I do. Here's the thing, the chicken was easy peasy because I had some leftover grilled chicken.
That's a lie.
I had a bag of pre-cooked grilled chicken that I bought at the store - EEK.
I usually have my own leftover grilled chicken but it was pretty cheap this week and I got a brand that didn't contain the ominous, soy protein. It was actual chicken so I was cool with it.
You can either use leftover chicken, grill your own, buy it pre-grilled or even go with rotisserie chicken; I think it would be fine.
Okay, so that dirty secret is out and we're over it, right?
Don't worry, they are real strawberries and real blueberries. My grocery store has also been having some pretty awesome deals on berries so I've been stocking up.
Here's what I did. I put a bag of chopped romaine lettuce in the bottom of a serving bowl. I then chopped up cooked chicken and red onion and placed then in rows over the lettuce. Because I need cheese in my life, I also put a little row of blue cheese crumbles in there too. The photo doesn't show it but when I dished out my portion I sprinkled a handful of sunflower seeds on top. I love seeds on salads. You can add them or leave them out.
As far as a dressing, well, I was in a hurry so I grabbed a bottle of a white balsamic honey vinaigrette out of the fridge. I think some good options would be a champagne vinaigrette, poppy seed dressing, traditional balsamic vinaigrette or if you really want to be indulgent, you could double down and use a blue cheese dressing.
However, if the bottled stuff just won't do for you, I think either of these dressing recipes from :my blogger friends would be a good addition to the salad:

Spring Salad With Chicken and Berries
Ingredients
- 10 oz chopped romaine lettuce
- 2 C diced grilled chicken
- ¼ C finely diced red onion
- 1 C sliced strawberries
- 1 C blueberries
- ¼ C blue cheese crumbles
- Optional 2 T sunflower seeds
Instructions
- Place lettuce in the bottom of a bowl.
- Arrange remaining ingredients over lettuce.
- If desired top with sunflower seeds.
- Serve with your favorite salad dressing.

This looks like an amazing salad! I usually have leftover grilled chicken in the freezer. When I find a great sale on chicken, I give at least 10 pounds of it to my husband to grill, then I slice it and throw it in the freezer. Makes for super fast meal prep! Can't wait to try it in your salad recipe!
