    St. Patrick's Day Cookie Bars - A delicious chocolate chip cookie bar adorned with green and yellow m&m's to give a little festive flare.

    Are These Cookie Bars The Same As The Christmas Cookie Bars?

    Short answer, yes. Read on.

    Last Christmas, I baked up a simple Christmas m&m Cookie Bar and my family LOVED them.  Apparently you did too because the page views on that recipe were out of this world.

    Because they were so easy, I decided, what the heck, why not make the same exact cookie bar but mix up the colors to serve on St. Patrick's Day.

    I used green m&ms all through the cookie bar but then just before baking I added about 16 yellow m&ms and spaced them out to where I thought it would end up with 1 yellow m&m per bar.  The yellow is my ode to a pot 'o gold.  Too corny?  Corny is my specialty.

    A lot of the St. Patrick's Day cookies and cookie bar recipes I see out there are sugar cookie based. My family prefers a chocolate chip cookie over a sugar cookie which is why I stick with this recipe.

    Celebrating St. Patrick's Day

    No, you don't have to be Irish to celebrate St. Patrick's Day. I mean, I am like 25% Irish but I do nothing that is authentically Irish for St. Patrick's Day. I will celebrate the Americanized way by cooking a corned beef and cabbage dinner, St. Patrick's Day Brownies, these festive m&m St. Patrick's Day Cookie Bars and we'll go to a parade. Heck, maybe I'll drink a green beer or a Guinness.

    For easy clean up, I use the disposable baking pans.  This one had a bit of a scalloped edge in case you're wondering why the weird shape on some of them.

    St. Patrick's Day Cookie Bar Notes:

    • If miniature m&ms are not available, use normal size and increase the amount to ¾ cup
    • 9x13 baking pan works best
    • add a few green sprinkles to the just when coming out of the oven for an extra pop of color

    St. Patrick's Day Cookie Bars

    An easy chocolate chip cookie bar made with festive green and yellow M&Ms to go along with a St. Patrick's Day theme!

    Ingredients
      

    • 2 C flour all purpose
    • ½ teaspoon salt
    • ½ tsp baking soda
    • 10 T butter melted
    • 1 C brown sugar
    • ½ C sugar granulated
    • 1 egg
    • 1 C chocolate chips semi-sweet
    • ¼ C mini m&ms green
    • 16 yellow m&m's optional

    Instructions
     

    • Preheat oven to 325 and prepare a 12 ¼ x 8 ¼ baking pan with cooking spray.  Set aside.
    • In a small bowl, whisk together flour, salt and baking soda.  Set aside.
    • Using either a stand mixer or a hand mixer, mix together melted butter, brown sugar and granulated sugar.  Add in egg and extract and mix again until smooth.  Continue to mix, adding in the flour, a little at a time until combined well.
    • Fold in chocolate chips and green m&ms.
    • Press the mixture into prepared pan. If desired, press the yellow m&ms on to the surface of mixture.
    • Bake 25-30 minutes until lightly browned at the edges(they may look not done but they are).  I have found that 27 minutes works perfectly for my oven.  Allow to cool before cutting and serving.

      I don't blame them. I'd dig right in immediately into these as well! I love recipes that you can tweak according to the season. And these are so appropriate for St. Patrick's Day!
