These m&m St. Patrick's Day Cookie Bars are every bit as delicious and irresistible as my Christmas Cookie Bars just with a little added St. Paddy's flare.
I prefer making a cookie bar over regular cookies because I'm lazy and I have no patience. To make a good cookie you have to chill the dough and cookie bars require no chilling or extra effort.

So let's address the elephant in the room. Are these cookie bars the exact same as the Christmas cookie bars?
Yes.
But I thought these cookie bars deserved their own post because of the holiday change up.
To make these chocolate chip cookie bars more St. Patrick's Day themed, I used the green m&ms all throughout the bars but I added only 16 yellow ones.
The yellow is my ode to a pot 'o gold. I know, corny but that's okay.
A lot of the St. Patrick's Day cookies and cookie bar recipes I see out there are sugar cookie based. My family prefers a chocolate chip cookie over a sugar cookie which is why I stick with this recipe.
Celebrating St. Patrick's Day
No, you don't have to be Irish to celebrate St. Patrick's Day.
I mean, I am like 25% Irish but I do nothing that is authentically Irish for St. Patrick's Day.
I will celebrate the Americanized way, by cooking a corned beef and cabbage dinner or maybe a Guinness Pot Roast with Buttery Instant Pot Cabbage, Baileys Irish Cream Brownies, these festive m&m St. Patrick's Day Cookie Bars and we'll go to a parade.
Heck, maybe I'll drink a green beer or a Guinness. Â

St. Patrick's Day Cookie Bar Notes:
- If miniature m&ms are not available, use normal size and increase the amount to Âľ cup
- 9x13 baking pan works best
- add a few green sprinkles to the just when coming out of the oven for an extra pop of color

St. Patrick's Day Cookie Bars
Ingredients
- 2 C flour all purpose
- ½ teaspoon salt
- ½ tsp baking soda
- 10 T butter melted
- 1 C brown sugar
- ½ C sugar granulated
- 1 egg
- 1 C chocolate chips semi-sweet
- ÂĽ C mini m&ms green
- 16 yellow m&m's optional
Instructions
- Preheat oven to 325 and prepare a 12 ¼ x 8 ¼ baking pan with cooking spray. Set aside.
- In a small bowl, whisk together flour, salt and baking soda. Set aside.
- Using either a stand mixer or a hand mixer, mix together melted butter, brown sugar and granulated sugar. Add in egg and extract and mix again until smooth. Continue to mix, adding in the flour, a little at a time until combined well.
- Fold in chocolate chips and green m&ms.
- Press the mixture into prepared pan. If desired, press the yellow m&ms on to the surface of mixture.
- Bake 25-30 minutes until lightly browned at the edges(they may look not done but they are). I have found that 27 minutes works perfectly for my oven. Allow to cool before cutting and serving.
