    St. Patrick's Day Cream Cheese Brownie Bites  -  A moist and delicious brownie cup with a little green flare.

     

    St. Patty's Cream Cheese Brownie Bites

    As usual, one of the better things I have made, happened on a whim.  I had no plan to bake today, but yet, I ended up with awesome St. Patty's Cream Cheese Brownie Bites. 

    I had some time to kill today while my son was at preschool, so my daughter and I did what we do best when Josh is at school.  We shopped!  After a very successful trip to the mall, we found ourselves with about twenty minutes to kill before pick up, so we ventured into the dollar store to buy ring pops.  While we were there, I saw all kinds of cute St. Patty's Day decorations and adornments.  So we loaded up on fun stuff to wear at our local parade.

    Once we were home and unpacking our St. Patty's gear, it of course started to snow.  When it snows, I bake.  It's just one of those things.  I had a few things on hand to work with and a trip back out was not an option.  So I did what anyone would do, I turned to Pinterest!  While browsing, I came across a recipe called Cream Cheese Brownie Cups.  I looked at the ingredient list, and low and behold, another blogger who likes to use pre-made brownie mix! Yay!  Okay, I had everything I needed on hand.  But how could I not add green, we were in the St. Patty's zone?  A quick run up to my cake decorating kit, revealed I had some green gel coloring - Score!

    Because I was making these for the kids, I actually baked mine in mini muffin tins, but feel free to use regular muffin tins. The kids were nervous that they were minty because of the green.  I had to assure them that I could make things green that were not minty, or "spicy" as they call it.  But if mint is your thing, just add a few drops of mint extract and you'll be good to go.

    St. Patty's Cream Cheese Brownie Bites

    I feel I must warn you.  If you make them in mini tins like I did, they are dangerous.  You can walk by and just pop one in your mouth, and another, and another, and it seems like nothing because they are so stinkin' small and cute, and next thing you know, you've eaten the equivalent of 7 regular sized brownies!  The other alternative is to just make these in a regular 9x13 pan and cut into traditional brownie squares.

    St. Patty’s Cream Cheese Brownie Bites

    Servings 48 mini brownie bites

    Ingredients
      

    • 18.3 oz box fudge brownie mix +ingredients called for on box
    • 4 oz cream cheese softened
    • 1 egg
    • ¼ C sugar
    • ⅛ teaspoon green gel food coloring

    Instructions
     

    • Preheat oven to 350.
    • Line mini muffin tin with liners or spray with non stick spray
    • Mix all brownie batter ingredients together, as called for on box
    • Spoon brownie batter into lined mini muffin tins, about ¾ full
    • In a separate bowl, mix together cream cheese, egg, sugar and lastly, food coloring.
    • Drop a dab of cream cheese mixture on top of each brownie. Swirl in design with toothpick.
    • Bake 350 for 10-15 minutes, or until toothpick comes out clean when testing the center of brownie.
    • Cool on wire rack.

      These are super cute, and they look so yummy! I'm totally in the same boat as you about mini things... you eat a bunch without realizing and then all the sudden you've eaten half the batch. Oops 🙂
