    Strawberry Tomato Salsa

    Because this strawberry tomato salsa is made with canned tomatoes instead of fresh, feel free to indulge all year long. Delicious salsa is not just a summertime treat.

    Adding fresh strawberries really gives this salsa a bright taste. And fresh strawberries are available most locations year round.

    Strawberry Tomato Salsa

     As you can tell by my recent recipes, I've been all about the grill lately.  I can't help it, it's the weather.  I know that I've told you  this a million times, but grilled chicken is not my favorite grilled meat.  It's one of those things, you know, it gets by with a little help....well, you know what I mean.  Basically it needs something to give it some pizazz!

    Seriously though, whenever I grill boneless chicken breasts, I need a sauce, a topping or better yet A SALSA! 

    Strawberry Tomato Salsa

    Last summer was the first time I started really playing around with salsa recipes and I was surprised at how easy salsa can be with the right ingredients on hand.  Salsa can totally transform a dish into something bright and vibrant and full of bold flavors!  And I'm not one to turn down a bowl with some chips either!

    Strawberry Tomato Salsa

    I had played around with strawberry salsas in the past and they've gone over great with the family, so I definitely wanted to use them again.  This is simple but flavorful.  I didn't add any crazy to find ingredients or unknown spices or herbs.  I wanted to make sure it stayed family friendly, especially since my little Nora actually likes salsa.  We want to keep her happy!

    Strawberry Tomato Salsa

    To give you an idea of how quick this salsa is put together, I got it together while the grill was preheating for my chicken.  While the chicken is cooking I placed it back in the fridge to let the flavors come together a bit.  I seasoned my chicken simply with just garlic powder, coriander, salt and pepper.

    Once the chicken is cooked, slice it, serve it over rice and spoon the salsa over it all.  Perfection!

    Serve this Strawberry Tomato Salsa over chicken, pork, eat with chips or grab spoon and have a little snack / salad.

    Ingredients
      

    • ½ C finely diced red onion
    • ÂĽ C finely diced jalapeno seeds removed
    • 2 C diced strawberries fresh
    • â…› teaspoon salt
    • 2 T lime juice fresh
    • 14.5 oz can Hunt's Diced Tomatoes
    • 1 avocado peeled and diced
    • 2 T freshly chopped cilantro

    Instructions
     

    • Add all ingredients to bowl. Stir together. Refrigerate until ready to serve.
    • Serve alone as a dip or over grilled chicken or pork.

      strawberries are such a versatile fruit. And one of the more inexpensive of berries. Love the use of them along with the familiar salsa flavors. Way to mix it up!

      Strawberries and tomatoes sound like a lovely combination, I grow both in the garden, so I'm wondering if I am lucky enough to get a bumper crop this year, if fresh tomatoes would work as well. What do you think?

        Yes, I'm sure fresh would work as well. I've just been a bit short on time lately. We had such a hellish winter that with this sunshine the kids just want to go go go all day, so the canned variety works well as a time saver.

      Love this salsa! I discovered recently how tasty tomatoes and strawberries are together and I can't get enough of this combination now. I like that you've used Hunt's tomatoes too - they are my favourite brand of canned tomato!
