Buffalo Chicken Egg White Omelet
Breakfast gets a little kick of flavor with this Buffalo Chicken Egg White Omelet. A low calorie breakfast that will fool you into thinking it's indulgent.

- 1 spray of olive oil spritz or 1 teaspoon olive oil
- 2 oz chicken cooked
- 1 T Buffalo Wing Sauce
- 6 T egg whites
- 1 T blue cheese crumbles
- 1 T chopped green onions
- Salt
- pepper
Reheat chicken. I do this in the microwave to keep it quick. Stir buffalo sauce into the chicken and set aside.
Place omelet pan over medium-low heat. Spritz with a mist of olive oil, or if no mister available, use 1 teaspoon olive oil.
Pour egg whites into heated pan and season with a pinch of salt and pepper. Let cook, WITHOUT stirring until starting to set. This should only take 2-3 minutes.
Arrange chicken, green onions and blue cheese crumbles on one half of omelet. Fold other half of egg over the fillings and let cook 1-2 minute more to heat through.
Serve immediately.
If desired, top omelet with 1 teaspoon buffalo sauce and/or additional blue cheese crumbles and green onions.
