Leftover Roast Breakfast Hash

This Breakfast Hash is perfect for day after Christmas or any day you find yourself with some leftover prime rib roast.

  • 1-2 large russet potato diced
  • 1 large sweet potato diced
  • ¼ C water
  • 1 T butter
  • ½ C sweet onion diced
  • 1-2 cloves garlic diced
  • 2 C beef roast cooked and diced or chopped
  • ½ teaspoon steak seasoning (salt, pepper, paprika, garlic powder type mixture)


  • Place diced potatoes in a microwave-safe container with ¼ C water. Partially cover but be sure it's vented and cook on high for 5 minutes in microwave. Drain all water. Set aside.
  • Place butter in a skillet over medium-high heat. Once butter is melted add onion and cook 2-3 minutes until starting to soften. Add potatoes to skillet. Let potatoes brown a few minutes before stirring. Cook just a few minutes until potatoes are browned on the outside and soft in the middle.
  • Once potatoes are browned, add garlic and diced beef to the skillet. Season with steak seasoning. Stir to combine and cook, stirring occasionally, just until beef is warmed.
