Avocado and Goat Cheese Open Faced Breakfast Sandwich

Ingredients

  • 1 avocado
  • 2 oz goat cheese
  • Salt and pepper to taste
  • 1 teaspoon butter
  • 1 egg
  • 1 English Muffin
  • Optional: a pat of butter for English Muffin

Instructions

  • In a bowl, mash avocado with a fork. Add goat cheese and continue mashing until well incorporated. Season with salt and pepper. Set aside.
  • Melt butter in a small fry pan over medium low heat. Crack egg gently into pan. Cover and cook for 4 minutes. Flip over and cook for 1-2 minutes (or to your liking).
  • While egg is cooking toast English Muffin.
  • Spread some avocado mixture on both halves of muffin. Place egg on top of one half. Cut into egg and use muffin to sop up the yolk. Enjoy!
