Beef and Bean Stir Fry

Ingredients

  • 1 ½ - 2 C chopped green beans
  • 1 lb ground beef
  • 1 sweet onion sliced
  • 2 garlic cloves chopped
  • 1 T chili paste
  • 1 C vegetable broth
  • 2 T soy sauce
  • 1 T rice vinegar
  • 2 teaspoon cornstarch

Instructions

  • Heat 1 T oil in large non stick skillet over medium/high heat. Add beans and sliced onions and cook 3-4 min, stirring a few times. Add garlic and cook 1-2 min more.
  • Remove from pan and set aside.
  • Return pan to medium/high heat. Add ground beef. Brown beef in pan. If needed, drain excess grease and then return beef to pan.
  • In a small bowl, whisk together chili paste, vegetable broth, soy, sauce, rice vinegar and cornstarch.
  • Pour soy/broth mixture into beef and return bean/onion mixture to pan as well. Stir well to combine everything. Cook, stirring occasionally until sauce thickens.
  • Serve over rice or noodles.
