Chicken Curry Meatballs

Ingredients

Meatballs

  • 1 lb ground chicken
  • ¼ teaspoon cinnamon
  • ¼ teaspoon coriander
  • ½ teaspoon curry powder
  • 1 teaspoon parsley flakes
  • ¼ teaspoon salt
  • 1 egg
  • ½ C panko crumbs
  • 2 T olive oil

Sauce

  • ½ onion yellow, diced
  • 2 garlic cloves minced
  • 1 carrot diced small
  • 1 T curry powder
  • 1 teaspoon coriander
  • ½ teaspoon nutmeg
  • 28 oz can diced tomatoes

Instructions

  • Combine all meatball ingredients, except olive oil, and roll into meatballs (about 16 meatballs yield).
  • Heat oil in large skillet over medium/high heat. Brown meatballs (in batches) on all sides. When all meatballs are browned, set aside.
  • Return pan to stovetop over medium heat. If all oil is gone, add 1 T and heat. Add onion and carrot. Cook 3-4 minutes, until starting to soften. Add garlic and spices, stir and cook 1 minute. Add tomatoes and stir well. Add meatballs back to pan, in sauce. Simmer 15-20 minutes, until meatballs are cooked through.
  • Serve over white or jasmine rice.
