Loaded Breakfast Fries
Crunchy golden fries covered in cheese, scattered with bacon and topped with sunny side up eggs. A fun and hearty breakfast treat.

- 4 large eggs
- 1 bag Crinkle Cut Fries
- ½ teaspoon seasoned salt
- 4 slices bacon cooked & roughly chopped
- ½ T butter
- 1 ½ C shredded cheese blend cheddar & Monterey jack
- 1 pinch salt
- black pepper
Optional
- 1-2 jalapeno peppers sliced, seeds removed to reduce heat
- 2 green onions chopped
Prepare fries as directed on package (while fries are cooking is a good time to cook and chop the bacon).
While fries are cooking, melt butter in a skillet over medium-low heat. Crack eggs into skillet, season with salt and pepper if desired and cook until whites are set (or desired doneness). Set aside.
When fries are crispy and golden brown, remove from oven (keep oven on). Season with seasoned salt. Sprinkle 1 C of cheese over the fries, top with bacon (and jalapeno if using). Arrange eggs on top of fries. Sprinkle the remainder of cheese over the eggs.
Pop the pan with the fries back into the oven to melt the cheese. This should only take 3-5 minutes. Remove from oven and top with chopped green onions. Serve immediately.
