Loaded Breakfast Fries

Crunchy golden fries covered in cheese, scattered with bacon and topped with sunny side up eggs.  A fun and hearty breakfast treat.

Ingredients

  • 4 large eggs
  • 1 bag Crinkle Cut Fries
  • ½ teaspoon seasoned salt
  • 4 slices bacon cooked & roughly chopped
  • ½ T butter
  • 1 ½ C shredded cheese blend cheddar & Monterey jack
  • 1 pinch salt
  • black pepper

Optional

  • 1-2 jalapeno peppers sliced, seeds removed to reduce heat
  • 2 green onions chopped

Instructions

  • Prepare fries as directed on package (while fries are cooking is a good time to cook and chop the bacon).
  • While fries are cooking, melt butter in a skillet over medium-low heat.  Crack eggs into skillet, season with salt and pepper if desired and cook until whites are set (or desired doneness).  Set aside.
  • When fries are crispy and golden brown, remove from oven (keep oven on).  Season with seasoned salt. Sprinkle 1 C of cheese over the fries, top with bacon (and jalapeno if using).  Arrange eggs on top of fries. Sprinkle the remainder of cheese over the eggs.
  • Pop the pan with the fries back into the oven to melt the cheese.  This should only take 3-5 minutes.  Remove from oven and top with chopped green onions.  Serve immediately.
