One Pot Mexican Turkey and Rice

Ingredients

  • 1 T Olive OIl
  • 20 oz Ground Turkey
  • 15 oz Black Beans canned, rinsed and drained
  • 15 oz Corn canned, drained
  • 10 oz Diced Tomato w/ Chilies Ro-Tel recommended
  • ½ teaspoon Garlic Powder
  • ¼ teaspoon Salt
  • teaspoon Black Pepper freshly ground
  • ½ teaspoon Chili Powder
  • ¼ teaspoon Cumin ground
  • 2 C Instant Brown Rice
  • 2 ½ C Chicken Broth
  • 1 C Shredded Cheddar Cheese
  • Optional Toppings: Guacamole / Sour Cream

Instructions

  • Heat olive oil in a large skillet, over medium/high heat. Add turkey and brown (about 5 minutes).
  • Stir in garlic powder, salt, pepper, chili powder and cumin.
  • Add in beans, corn and tomatoes. Stir in the rice and add in the broth. Stir well to make sure rice is distributed evenly (or close to it).
  • Bring to a boil. Cover and reduce heat to low. Simmer 10 minutes.
  • Sprinkle cheese over the top and replace cover until cheese is melted (about 2 minutes).
  • Top with guacamole and/or sour cream.
