One Pot Sausage Orecchiette

Ingredients

  • 1 T olive oil
  • 6 hot sausage links removed from casing (or ground sausage)
  • 1 sweet onion diced
  • 5-6 cups vegetable broth
  • 2 C orecchiette pasta
  • 6 oz arugula
  • ¼ C freshly grated parmesan cheese
  • Salt and pepper to taste
  • Optional: ¼ C toasted breadcrumbs

Instructions

  • Heat 1 T olive oil In a large, non stick, high sided skillet over medium/high heat. Add diced onion. Cook 3-4 minutes, stirring often. Add sausage and break up with spoon. Cook, stirring periodically until sausage is browned and cooked through.
  • Pour in vegetable broth and pasta. Bring up to a boil and then reduce heat to medium and allow to simmer until pasta is al dente and most of the liquid is absorbed, stirring occasionally. If liquid absorbs too quickly, just add in a little more.
  • Once pasta is cooked to liking, add in arugula and pop a cover on. You may have to do this in batches. Adding in arugula then covering until wilted, then stir and add in more, until all arugula has been wilted in.
  • Remove from heat and stir in parmesan cheese.
  • Season with salt and pepper if desired.
  • Optional: Top with toasted breadcrumbs just prior to serving.
