One Pot Tortellini and Ground Beef Skillet Casserole

Ingredients
20ouncescheese tortellinirefrigerated
1poundground beef
1small oniondiced
2clovesgarlic minced
½teaspoonItalian seasoning
1teaspoonsalt
½teaspoonblack pepper
10ouncescan diced tomatoesdrained
2 ½cupbeef broth
¼cupheavy cream
1 ½cupshredded cheddar cheese or cheese blend
2tablespoonfreshly chopped parsley
Instructions
Brown ground beef in a large (oven safe) skillet, over medium/high heat. If needed, drain excess grease from pan. Return pan with ground beef back to stove over medium/high heat and add in onions and garlic. Cook, stirring a few minutes until onion starts to soften.
Stir in salt, pepper and Italian seasoning.
Add tortellini to pan, along with tomatoes and broth. Bring to a boil. Cover and reduce heat to simmer for 5 minutes. Remove cover and continue to simmer a few more minutes until liquid is almost absorbed.
Remove pan from heat and stir in heavy cream and ½ C cheese. Top with remaining cheese.
Place skillet in oven on broil for just a few minutes until cheese is bubbly and starting to brown.
