Add diced potatoes and broth to a large skillet over medium/high heat. Drizzle olive oil over the potatoes and allow the potatoes to cook until tender and browned, about 15 minutes (as the broth evaporates, the olive oil will prevent sticking and help with browning). Stir occasionally.
Add onions, peppers and kielbasa to the pan, along with 1 T butter.
Season everything with salt, pepper and paprika.
Cook an additional 10 minutes or so until kielbasa is cooked through and vegetables begin to soften, stirring occasionally.
If desired serve with an egg on top.
