Pancetta and Spinach Gnocchi

Ingredients

  • 1 package gnocchi
  • 1 T olive oil
  • 3 oz pancetta cut into strips
  • 1 large shallot diced
  • 2 cloves garlic minced
  • 2 C spinach fresh
  • 1 T lemon juice fresh
  • ¼ teaspoon salt
  • teaspoon freshly cracked black pepper
  • ¼ C freshly grated parmesan cheese
  • Optional 1 T butter

Instructions

  • Cook gnocchi according to package directions. Drain but reserve ¼ C cooking water.
  • Heat oil in a large non stick skillet over medium/high heat. Add pancetta. Cook 3-4 minutes or until lightly browned. Transfer to paper towel lined plate.
  • Place the same skillet back on burner over medium heat. Add shallots and spinach. Cook, stirring often until spinach is just wilted (about 3 min), add garlic and cook 1 minute.
  • Stir in gnocchi, pancetta, lemon juice, reserved cooking water, salt and pepper. Cook together 2-3 minutes.
  • Remove from heat and top with freshly grated parmesan cheese.
  • Optional - Stir in 1 T butter just before removing from heat.
