Red White and Blue Layered Ice Cream Cake

Two layers of baked cake with a layer of creamy ice cream in the center. Much easier than you'd expect.

Ingredients

  • 1 boxed cake mix blue
  • 1 boxed cake mix red velvet
  • OR 1 boxed cake mix white and color half blue and half red with food coloring
  • 1.5 Quart vanilla ice cream
  • 16 oz prepared frosting vanilla
  • 8 oz Cool Whip
  • Optional: Sprinkles colored sugar etc. to decorate

Instructions

  • Bake cakes, in 8 inch pans, according to package instructions. Let cool.
  • Line an 8 inch cake pan with parchment, leaving a bit of an overhang of parchment to lift ice cream with.
  • Allow ice cream to soften, by leaving out of freezer for about 10 minutes.
  • Once ice cream is softened, spread into lined cake pan. Place back in freezer until firm, about an hour.
  • Stir together Cool Whip and frosting until well blended.
  • Layer in this order: red cake, ice cream, blue cake. Frost the entire cake with frosting mixture. Decorate if desired. Place back in freezer to firm up, about an hour before serving.

Notes

Most boxed cake mixes will make two 8 inch cakes. If you buy separate red and blue cake mixes, you will end up with extra. Bake those cakes and as soon as they are cooled, wrap your extra cakes in plastic wrap and freeze for later use.
