Place corn (still in husks) directly on grates in oven and roast for 30 minutes. Allow to cool before removing silks and husks.
Carefully, run a sharp knife down the sides of the cob to remove the corn kernels. Place in bowl.
Add mango, red onion, jalapeno, lime juice, cilantro and salt (start with less salt and add more to taste as needed). Stir to combine. Refrigerate until needed.
I also enjoyed this straight out of the bowl with tortilla chips.
Notes
If using as a relish, spoon atop grilled sausages. I used as a relish on top of Jalapeno flavored Chicken Sausage.
