Savory Oats Topped With A Runny Egg

Ingredients

  • 1 cup chicken stock
  • ½ cup quick cooking oats
  • salt
  • black pepper fresh cracked
  • 1 egg
  • non stick spray
  • 1 T chopped scallion

Instructions

  • Place chicken stock in a small saucepan.  Add a pinch of salt and pepper.  Bring up to a boil.
  • Stir oats into boiling stock.  Reduce heat to medium/low and simmer for about 5 minutes.  Set aside.
  • While oats are cooking, spray a non-stick fry pan/skillet with non-stick spray.  Place over medium heat.  When pan is hot, crack egg into pan.  Season egg with salt & pepper.  Cook until white is just set.  Flip over and cook 1 minute more.  Or cook to desired yolk consistency.
  • Place oats in a bowl.  Top with egg.  Garnish with scallion if desired.
