Place chicken stock in a small saucepan. Add a pinch of salt and pepper. Bring up to a boil.
Stir oats into boiling stock. Reduce heat to medium/low and simmer for about 5 minutes. Set aside.
While oats are cooking, spray a non-stick fry pan/skillet with non-stick spray. Place over medium heat. When pan is hot, crack egg into pan. Season egg with salt & pepper. Cook until white is just set. Flip over and cook 1 minute more. Or cook to desired yolk consistency.
Place oats in a bowl. Top with egg. Garnish with scallion if desired.
