Slow Cooker Chicken Lo Mein

- 1 pound chicken boneless & skinless
- 1 cup carrots julienne / matchstick cut
- 1 red bell pepper sliced
- ⅔ cup lite soy sauce
- ½ cup hoisin sauce
- 2 tablespoon oyster sauce
- 4 tablespoon brown sugar light brown
- 4 cloves garlic minced
- ½ teaspoon red chili flakes more or less to taste
- 8 ounce snow peas
- 2 scallions chopped
- 14 ounce lo mein noodles
- sesame seeds optional
Place chicken in the slow cooker. Add peppers and carrots on top of chicken.
Whisk together soy sauce, hoisin, oyster sauce, sugar, garlic and red pepper flakes in a bowl. Pour over the chicken and vegetables.
Cover and cook on low for 6 hours or high for 4 hours.
Remove chicken from slow cooker and shred, using two forks, meat claws or a shredding tool. Place shredded chicken back in slow cooker and add the snow peas. Stir to coat everything evenly. Cover and let sit for 15 minutes.
In the meantime, prepare the noodles according to package instructions. Drain noodles and add to slow cooker. Toss well.
Garnish upon serving with chopped scallions and/or sesame seeds.
