Slow Cooker Italian Beef

Perfect for sandwiches, this Slow Cooker Italian Beef uses only a handful of easy ingredients. Fall apart tender chuck roast, Italian dressing, onions and simple seasonings.

Equipment

Ingredients

  • 3 pound Beef Chuck Roast
  • ½ cup Italian dressing Robusto or Zesty
  • ½ teaspoon garlic powder
  • 1 large Onion Sweet, Sliced
  • ½ teaspoon Salt
  • ½ teaspoon Black Pepper
  • 15 ounce Jar Roasted Red Peppers drained and sliced

Instructions

  • Spray slow cooker with non stick spray, or insert a liner. Scatter the onion inside slow cooker . Season roast with garlic powder, salt & black pepper. Place roast on top of onions. Pour dressing on top of roast. Cover and cook on low 6 hours.
  • After 6 hours, remove roast, shred meat and place back into slow cooker. Stir in sliced and drained roasted red peppers.
  • Keep slow cooker on low until ready to use.

Notes

If making sandwiches, I highly recommend this method.
Drizzle ciabatta roll with olive oil and broil for 2 minutes to toast.
Layer mozzarella cheese, beef mixture and cheddar cheese on toasted roll. 
Place assembled sandwich back under broiler for 1-2 minutes until cheese is melted.
